Hello everyone, this is Gurumdalbit! Today, I’ve made a delightful Carrot Kimbap, known to aid in vision improvement. Many people dislike carrots because they are hard, difficult to eat, and not particularly tasty. Carrot Kimbap was also featured by Park Eun-hye on ‘Sumine Banchan’. I even took a peek at ‘The Master of Living’ for inspiration! Let’s pack our kimbap generously with eye-healthy carrots and enjoy this wonderful dish!

Ingredients
  • 1 fistful of cooked rice
  • 1 sheet of kimbap seaweed
  • 1 egg
  • 1 crab stick
  • 1 piece of ham
  • 1/4 carrot
  • A small amount of pickled radish (danmuji)
  • Salt for seasoning

Cooking Instructions

Step 1

First, let’s prepare the fillings. Slice the crab stick and ham into bite-sized pieces and stir-fry them in a pan with a little cooking oil until golden brown. Finely julienne the carrot, add a pinch of salt, and stir-fry it until tender. Mix the stir-fried carrots directly with the warm rice. It’s important to mix them while the rice is warm so that the ingredients combine evenly and the flavor is consistent throughout!

Step 2

Next, we’ll make the egg garnish. Beat one egg thoroughly to create an egg wash. I chose to thinly fry the egg, then roll it up and slice it into 2cm thick pieces. This method prevents the egg from breaking easily when used as a filling. You can also simply fry it thinly and then cut it, depending on your preference.

Step 3

Now, let’s roll the kimbap! Lay a sheet of kimbap seaweed flat on a cutting board. Spread the prepared carrot rice thinly and evenly over the seaweed. Be careful not to make the rice layer too thick, as it might cause the kimbap to break. Arrange the stir-fried crab stick, ham, julienned pickled radish, and the prepared egg slices on top of the rice, layer by layer. Finally, starting from the edge closest to you, roll the seaweed tightly, ensuring the fillings don’t spill out. And voilà! Your special Carrot Kimbap, which is both good for your eyes and incredibly delicious, is complete!
