Forget any preconceptions of it being dry! This curry is made with tender chicken breast, adding a chewy texture and savory richness. Not only will you declutter your freezer, but you’ll also enjoy a hearty meal with this delicious chicken breast curry.
Main Ingredients- 1 cup-sized portion of chicken breast
- 1 cup-sized portion of curry powder
- 3 cups of water
- 1 onion
- 5cm piece of carrot
- 3 stalks of garlic scapes
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to your curry. Peel and wash the carrot and onion thoroughly, then chop them into bite-sized pieces or your desired shape so they mix well with the chicken breast curry. Wash the garlic scapes and chop them into similar sizes. (Feel free to add other leftover vegetables from your fridge, like zucchini or bell peppers!)
Step 2
Thaw the frozen chicken breast, then tear it into bite-sized pieces by hand or cut it with a knife, similar to the size of the vegetables you prepared. Tearing the chicken breast allows the seasoning to penetrate better, making it even more delicious.
Step 3
In a wide pot, combine the curry powder with 3 cups of water and stir until it’s smoothly dissolved without any lumps. Use a whisk or spoon to ensure a smooth mixture.

Let’s start by cooking the harder vegetable, the carrot. Lightly oil the pot, add the carrots, and then add a little water (about 1/4 cup). Cover the pot and simmer over medium-low heat until the carrots are tender. They should be easily pierced with a fork.

Once the carrots are partially cooked, add the chopped garlic scapes and onion. Continue to cook, covered, over medium-low heat for another 5-7 minutes until all the vegetables are tender. The curry sauce will thicken as the vegetables cook.

Check if all the vegetables are tender, then add the prepared chicken breast to the pot. Gently stir to mix the chicken breast well into the curry sauce.
Step 7
Finally, pour the pre-dissolved curry mixture into the pot. Bring to a boil over medium-high heat, then reduce to low heat. Continue to simmer for another 2-3 minutes, stirring occasionally to prevent sticking, until the curry thickens and the ingredients are well combined. Serve the deliciously finished chicken breast curry over warm rice for a fantastic meal!
