Samgyetang Ingredients- 8 chicken drumsticks
- 1 bunch of chives
- 2 stalks of green onion
- 1 onion
- 15 cloves of garlic
Special Dipping Sauce Ingredients- 1 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp Jin-ganjang (Korean soy sauce)
- 1/3 Tbsp mustard
- 1/2 Tbsp minced garlic
- 1 Tbsp vinegar
- 1/2 tsp sugar
- 1 Tbsp hot chicken broth
- 1 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp Jin-ganjang (Korean soy sauce)
- 1/3 Tbsp mustard
- 1/2 Tbsp minced garlic
- 1 Tbsp vinegar
- 1/2 tsp sugar
- 1 Tbsp hot chicken broth
Cooking Instructions
Step 1
First, soak the fresh chicken drumsticks in rice water for 30 minutes to remove any gamey odor. If you don’t have rice water, rinsing them thoroughly under running water is also sufficient. This step ensures a clean and pure flavor without any unpleasant smell.
Step 2
Now, place the prepared chicken drumsticks in a pot along with one large stalk of green onion cut into large pieces, half an onion, and 15 whole garlic cloves. Add enough water to fully submerge the ingredients and boil over high heat for 30 minutes. This slow simmering will make the chicken drumsticks tender and the broth rich and flavorful.
Step 3
While the chicken is boiling, skim off any foam or impurities that rise to the surface with a spoon or sieve. Removing these bits will result in a clearer broth and a more refined taste.
Step 4
For the dipping sauce, finely mince the green onion until it’s about the length of your thumbnail. Minced green onion adds a wonderful depth of flavor to the sauce. Cut the remaining green onions into 10-15 cm lengths and halve them lengthwise.
Step 5
Chop the chives to a similar length as the prepared green onions. The fresh, aromatic scent of chives will further enhance the overall taste of the Samgyetang.
Step 6
Now, let’s make the special dipping sauce that will elevate your Chicken Drumstick Samgyetang. First, mix 1 tablespoon of gochugaru (Korean chili powder) with 1 tablespoon of hot chicken broth. Stir well until the chili powder is smoothly dissolved. This technique prevents lumps and creates a more palatable sauce.
Step 7
To the dissolved gochugaru mixture, add 2 tablespoons of Jin-ganjang (Korean soy sauce), 1/3 tablespoon of pungent mustard, 1/2 tablespoon of minced garlic, 1 tablespoon of vinegar for a refreshing tang, and 1/2 teaspoon of sugar for a hint of sweetness. Mix everything thoroughly until well combined, and your delicious dipping sauce is ready!
Step 8
Once the chicken drumsticks are fully cooked and tender, remove the green onions and onion from the pot. You can use them for another dish or simply discard them. Keep the chicken drumsticks in the pot with the rich, clear broth.
Step 9
Transfer the perfectly cooked chicken drumsticks to a serving plate, arranging them neatly. The beautifully cooked, pale chicken drumsticks will surely whet your appetite.
Step 10
Bring the chicken broth to a boil again, then add the cut green onions and chives. Blanch them for just about 10 seconds. Avoid overcooking them, as you want to retain their crisp texture. A quick blanch is key!
Step 11
Finally, artfully arrange the briefly blanched green onions and chives on top of the chicken drumsticks on the serving plate. Your wonderful Chicken Drumstick Samgyetang is now complete and ready to be enjoyed by the whole family! Dip the drumsticks into the special sauce you prepared for an even more delicious experience.
