Chungmu Gimbap Ingredients

  • 2 squids
  • 1 Tbsp cooking wine (mirin or sake) for de-odorizing
  • 1 Tbsp vinegar (for blanching)
  • 2 sheets of square fish cakes
  • 2 Tbsp broth (or water) for braising fish cakes
  • 8 sheets of gimbap seaweed
  • 4 bowls of freshly cooked rice
  • Sesame oil, to taste
  • Salt, to taste
  • Toasted sesame seeds, to taste

Seasoning for Squid & Fish Cakes

  • 3 Tbsp soy sauce
  • 1 Tbsp fish sauce (for umami)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp minced garlic
  • 1 Tbsp sugar (adjust sweetness)
  • 1 Tbsp corn syrup or rice syrup (for gloss and sweetness)
  • 1 Tbsp sesame oil (for nutty aroma)
  • 1/2 white part of a large green onion, finely chopped

Cooking Instructions

Step 1

First, let’s prepare the flavorful seasoning sauce for the Chungmu Gimbap. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp fish sauce, 3 Tbsp gochugaru, 2 Tbsp minced garlic, 1 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp sesame oil. Mix them well. Finally, add the finely chopped white part of 1/2 green onion and stir again to create the complete seasoning sauce.

Prepare the squid by removing the skin. Using a knife, score the squid in a diamond pattern to create bite-sized pieces. This scoring helps the seasoning penetrate better and improves the texture.

In a pot, bring enough water to a boil, adding 1 Tbsp vinegar and 1 Tbsp cooking wine. Once the water is boiling, add the prepared squid and blanch it for just 1-2 minutes. Be careful not to overcook, as it can become tough.

Rinse the blanched squid under cold water to remove excess moisture. Then, place it in the prepared seasoning sauce and gently mix it by hand. Let it marinate for about 10 minutes to allow the flavors to meld, resulting in a delicious seasoned squid.

Cut the square fish cakes into bite-sized pieces. In a pan, add the cut fish cakes and 2 Tbsp of broth (or water). Sauté over medium-low heat until the liquid has reduced and the fish cakes are slightly caramelized. Add 1-2 Tbsp of the prepared seasoning sauce and simmer until sweet and savory. To the 4 bowls of freshly cooked warm rice, add a drizzle of sesame oil, a pinch of salt, and some toasted sesame seeds. Gently mix everything together, being careful not to mash the rice grains.

Cut the gimbap seaweed sheets into four equal pieces. Place a portion of the seasoned rice onto each seaweed piece, leaving a small border at the top edge. Roll them up tightly, pressing gently to ensure they hold their shape.
