Main Ingredients

  • Dried Shredded Squids (Jinmi-chae) 200g
  • Mayonnaise 2 Tbsp

All-Purpose Sauce

  • Gochujang (Korean chili paste) 2/3 cup
  • Oligodang (corn syrup) 2/3 cup
  • Sugar 1/2 cup
  • Gochugaru (Korean chili flakes, fine) 1/2 cup
  • Water 1/3 cup
  • Sesame oil, a little
  • Toasted sesame seeds 1-2 Tbsp

Cooking Instructions

Step 1

First, let’s make Baekpa’s all-purpose sauce. The basic ratio is to prepare gochujang and oligodang in equal parts, 2/3 cup each. You can measure with a paper cup, but the ratio is more important than the cup size, so feel free to use any cup you have. This all-purpose sauce is great for jinmi-chae and various other dried seafood dishes once you make a batch.

Next, add sugar and fine gochugaru, each measuring 1/2 cup. Sugar will provide sweetness, and fine gochugaru will add a mild spiciness.

Combine the gochujang, oligodang, sugar, and gochugaru that you prepared. Then, add 1/3 cup of water and mix again to create the base of your sauce.

While this is Baekpa’s recipe, I found the sweetness a bit strong for my taste, so I added a bit of soy sauce and minced garlic. Feel free to adjust the seasoning according to your preference by adding soy sauce, garlic, or other ingredients to make it your own!

Pour the prepared sauce into a pot and simmer over low heat, stirring constantly to prevent sticking. The sauce is ready when it starts to bubble vigorously and thickens. If it becomes too thick, you can add a little water to reach your desired consistency. The finished sauce should have a drizzling consistency.

Now, let’s prepare the main ingredient, jinmi-chae. Cut the dried shredded squids into bite-sized pieces. Place them in a bowl and mix well with 2 Tbsp of mayonnaise. Pre-mixing with mayonnaise helps make the jinmi-chae more tender and allows the sauce to adhere better.

Add about 5-6 Tbsp of the prepared all-purpose sauce to the jinmi-chae and mix gently. To protect your hands from the hot sauce, wear a cloth or rubber glove first, then put on a disposable glove over it before mixing. Ensure the sauce is evenly distributed throughout the jinmi-chae.

Finally, drizzle in a little sesame oil and sprinkle 1-2 Tbsp of toasted sesame seeds to finish. Because it was pre-mixed with mayonnaise, it’s tender and nutty, and the perfectly balanced spicy, sweet, and savory sauce creates an excellent side dish. Enjoy this addictive jinmi-chae that will make you want to finish a whole bowl of rice!
