Ham and Veggie Ketchup Fried Rice Omelet
An omelet made with flavorful fried rice packed with ham and colorful vegetables. A delightful dish that’s sure to be a family favorite.
Rice & Topping Ingredients- 2 bowls cooked rice, warm
- 1/2 can (approx. 150g) canned ham
- Small amount of zucchini (approx. 1/4)
- 1/2 small onion (approx. 50g)
- 2 fresh eggs
Fried Rice Seasoning- Pinch of salt (to taste)
- Pinch of black pepper (to taste)
- 2 Tbsp Tonkatsu sauce (adds a deep flavor)
- Mayonnaise, as needed (for creaminess)
Special Ketchup Sauce- 3 Tbsp ketchup
- 3 Tbsp hot sauce (for a touch of spice)
- 1 Tbsp corn syrup (for shine and sweetness)
- Pinch of salt (to taste)
- Pinch of black pepper (to taste)
- 2 Tbsp Tonkatsu sauce (adds a deep flavor)
- Mayonnaise, as needed (for creaminess)

Cooking Instructions
Step 1
First, prepare the vegetables and ham that will add flavor to your fried rice. Dice the canned ham into bite-sized cubes. Finely chop the zucchini and onion. The smaller the vegetables are chopped, the better they will blend with the rice and enhance the texture.
Step 2
Let’s make the special ketchup sauce to add deliciousness to the fried rice! In a bowl, combine 3 Tbsp ketchup, 3 Tbsp hot sauce (optional), and 1 Tbsp corn syrup. Mix well. The corn syrup will add a lovely sheen and sweetness.
Step 3
Now, let’s start making the fried rice. Heat a generous amount of cooking oil in a pan over medium heat. Add the minced onion and zucchini and stir-fry until they become translucent. Season lightly with a pinch of salt and pepper as you stir-fry.

Once the vegetables are tender, add the diced ham and stir-fry together. The ham will release some oil, adding to the flavor. When the ham is lightly browned, add 2 bowls of warm cooked rice. Use a spatula to break up the rice and stir-fry until all ingredients are well combined.

When the rice is fluffy and well-fried, pour in all of the prepared special ketchup sauce. Stir-fry quickly over high heat, ensuring the sauce coats every grain of rice. Finally, add Tonkatsu sauce and mayonnaise to your preference for added richness and creaminess, and stir once more.

Next, we’ll make the omelet, the star of the omurice! Crack 2 eggs into a bowl. Remove the chalaza (the stringy white part) and whisk the eggs gently with a fork until smooth. No need to add salt at this stage.
Step 7
Prepare another non-stick pan and heat it over low heat. Lightly coat the pan with cooking oil and then gently wipe it with a paper towel. This helps prevent the egg from sticking and ensures a beautifully cooked omelet.
Step 8
Once the pan is slightly warm, pour in half of the whisked egg mixture and spread it thinly to create an omelet. As the edges of the egg start to cook, continue cooking over low heat. Be careful not to cook over high heat, as it can burn easily.
Step 9
Place one portion of the fried rice neatly onto one side of the cooked egg omelet. It’s important to center the rice on the omelet for easy folding.
Step 10
Carefully fold the egg omelet over the fried rice to create a neat parcel. Aim for a pleasing pouch-like shape. Gently press the edges with a spoon or spatula to help it hold its form.
