First, slice the tofu into 1cm thick pieces. It’s best to slice them thickly, as they can easily crumble if too thin. Then, use kitchen towels to thoroughly pat dry the tofu, removing excess moisture. This step is crucial to prevent the tofu from falling apart during cooking and to achieve a crispier texture.

While the tofu is drying, wash the perilla leaves, pat them dry, and cut them in half. Adding perilla leaves will enhance the aroma and flavor, making the dish even more delicious. (You can omit the perilla leaves if you prefer.)

On a cutting board or plate, lay out a slice of Mokwoochan bacon. Place a piece of the dried tofu on top, followed by a perilla leaf. Then, carefully roll the bacon around the tofu and perilla leaves, securing them tightly. The bacon fat will render and infuse into the tofu, adding a savory richness.

Evenly coat the outside of the rolled tofu and bacon with potato starch. Applying a thin, even layer of starch will help create a crispy, fried coating when cooked. Be careful not to use too much starch, as it can make the texture heavy.
