Ingredients- 3 large fresh eggs
- 30g sweetener (such as erythritol or your preferred keto-friendly sweetener, or sugar)
- 1g fine sea salt
- 10g coconut oil, melted
- 100g blanched almond flour
- 1g baking powder
- Sugar-free blueberry jam (optional, for serving)
- 20g neutral vegetable oil (e.g., canola oil)
Cooking Instructions
Step 1
In a mixing bowl, crack 3 large eggs. Add 30g of sweetener and 1g of salt. Whisk gently until the sweetener and salt are dissolved. You don’t need to whip the eggs excessively at this stage.
Step 2
Pour in 10g of melted coconut oil and 20g of canola oil. Stir gently to combine. (Tip: You can also use a total of 30g of canola oil if you prefer; this can help enhance the bread’s moisture.)
