Main Ingredients

  • 2 sheets Gim (seaweed for gimbap)
  • 4 pieces Chicken breast (approx. 200g)
  • 100ml Milk
  • 5 Eggs
  • 1 Carrot
  • 4 Lettuce leaves
  • 8 slices Processed ham
  • 8 slices Processed cheese
  • A small amount of Red cabbage

To remove any gamey smell from the chicken breast and ensure a tender texture, soak the chicken pieces in 100ml of milk for about 20 minutes. The milk will effectively absorb any unwanted odors.

Thoroughly wash and peel the fresh carrot. Then, julienne it into thin strips, about 0.5cm thick, suitable for gimbap filling. This ensures a pleasant bite.

Wash the vibrant red cabbage, remove any tough outer leaves, and thinly shred it using a mandoline slicer or a knife. Thinly sliced cabbage will provide a tender crunch within the roll.

Crack 5 eggs into a bowl, add a pinch of salt for seasoning, and whisk them well. Heat a non-stick pan with a generous amount of cooking oil over low heat. Pour the egg mixture thinly and evenly to create an omelet. Cook until set, then roll it up tightly for easy slicing later.

Season the julienned carrots with a pinch of salt. Heat a pan with a little olive oil over medium heat and stir-fry the carrots briefly until they are tender-crisp. Be careful not to overcook them, as they can become mushy.

Rinse the milk-soaked chicken breast under running water to remove the milk. Place the chicken in a pot, cover with water, add 1 tablespoon of mirin (or rice wine) to help deodorize, and simmer for about 12 minutes until fully cooked and tender.

Once the egg omelets have cooled slightly, cut them into strips about 0.5cm to 1cm thick. This will make for neat and appealing layers inside the gimbap.

If your processed ham slices are thick, cut them into long, thin strips, about 0.5cm wide, for easy inclusion in the gimbap. You can pan-fry the ham for extra flavor, but it’s also fine to use it as is.

Shred the cooked chicken breast into bite-sized pieces along the grain. Season the shredded chicken with a pinch of black pepper, a little sesame oil, and salt. Gently mix everything together for a flavorful and moist filling.

Now it’s time to assemble the gimbap! Place a sheet of gimbap seaweed on a rolling mat, shiny side down. On the top two-thirds of the seaweed, layer the ingredients in the following order: processed cheese, egg omelet strips, fresh lettuce leaves, stir-fried carrots, shredded chicken breast, processed ham strips, and finally the colorful red cabbage. Be mindful not to overfill, as this can cause the roll to break.

Using the rolling mat, tightly roll the seaweed and fillings into a log. You can lightly moisten the edge of the seaweed with water or a grain of rice to help seal it. Brush the outside of the rolled gimbap with a little sesame oil for shine, and sprinkle generously with toasted sesame seeds. Slice the gimbap into bite-sized pieces for a delicious and healthy Keto Gimbap!
