A quick and satisfying meal using leftover rice and kimchi! This recipe details how to make incredibly delicious kimchi fried rice, perfect on its own without any side dishes. Ideal for lunch or dinner.
Kimchi Fried Rice Ingredients- 1 bowl of warm rice (approx. 200g)
- 1 cup of well-fermented kimchi (approx. 200g)
- 2 frankfurter sausages (or your favorite ham)
- 1/2 stalk of green onion (approx. 50g)
- 1/2 Tbsp minced garlic (approx. 5g)
- 3 Tbsp cooking oil (approx. 45ml)
- 1/2 Tbsp sugar (approx. 5g)
- 1/2 Tbsp soy sauce (approx. 5ml)
- 1/2 Tbsp red pepper flakes (Gochugaru, approx. 3g)
- 1 egg (for frying)
- A pinch of dried seaweed flakes (Gim)
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, prepare the kimchi, the star ingredient of kimchi fried rice. If you have some sour, well-fermented kimchi, chop it finely with scissors into bite-sized pieces. If it’s too sour, a little extra sugar can balance the flavor.
Step 2
Measure out approximately 1 cup (about 200g) of the chopped kimchi. Feel free to adjust the amount of kimchi based on your preference and the amount of rice.
Step 3
Prepare half a stalk of green onion (about 50g) and chop it finely. Stir-frying green onions adds a subtle sweetness and aromatic depth, enhancing the overall flavor of the kimchi fried rice.
Step 4
Briefly blanch the 2 frankfurter sausages in boiling water, then slice them thinly. If you’re using other types of ham, slice them similarly. Blanching helps remove any casing odor and makes the sausages more tender.

Now, let’s start stir-frying! Heat 3 tablespoons of cooking oil (about 45ml) in a pan over medium-low heat. Add the chopped green onions and 1/2 tablespoon of minced garlic (about 5g). Sauté them until they turn golden brown and fragrant, being careful not to burn them.

Once you can smell the fragrant aroma of the green onions and garlic, add the sliced sausages. Stir-fry them together until they are lightly browned and have released some of their flavorful oils.

When the green onions, garlic, and sausages are nicely sautéed, add 1/2 tablespoon of sugar (about 5g). Stir well to dissolve the sugar. This step balances the sourness of the kimchi and adds a touch of sweetness.

As the sugar dissolves and melds with the other ingredients, pour 1/2 tablespoon of soy sauce (about 5ml) along the edge of the pan. Stir-fry to infuse the aroma. Be mindful not to add too much soy sauce, as it can make the dish too salty.

Now it’s time to add the star ingredient: the chopped kimchi. Add it to the pan and stir-fry together with the sautéed ingredients.

To enhance the color and flavor, add 1/2 tablespoon of red pepper flakes (Gochugaru, about 3g). This helps absorb some of the kimchi’s moisture and gives the fried rice a more appealing, vibrant red hue.

Continue stir-frying until all the ingredients are well combined and the kimchi is tender. The fried rice should look moist and have a beautiful, appetizing color.

Now, add the rice. Put in 1 bowl of warm rice (about 200g). Use a spatula to gently break up any clumps and mix the rice evenly with the kimchi mixture, ensuring every grain is coated. If using cold rice, warm it slightly in the microwave first.
