The key to delicious kimchi fried rice is well-fermented kimchi and its juice. Prepare the kimchi juice in advance.

Finely chop the Napa cabbage kimchi into pieces about 0.5cm thick. It’s important to prepare a generous amount of kimchi juice. The savory flavor of the kimchi juice seasons the entire dish, so you don’t need to add extra seasoning. The point is to bring out the original flavor of the kimchi!

Chopping the kimchi finely helps it blend well with the rice, making the fried rice even more delicious. It also results in a softer texture.

Slice the Spam into thin, flat pieces, about 0.5cm thick, for easy eating.

When making kimchi fried rice, I prefer to fry the Spam separately rather than stir-frying it with the kimchi. This method enhances the Spam’s flavor. Place the sliced Spam in a heated frying pan and cook until golden brown.

In the pan for your kimchi fried rice, add a generous amount of sesame oil and then add the finely chopped kimchi. Stir-fry over medium heat to prevent the kimchi from sticking to the bottom of the pan.
