Ingredients

  • 1/2 cup well-fermented kimchi, finely chopped
  • 2 tablespoons cooking oil
  • 1 bowl warm cooked rice
  • A little green onion, finely chopped
  • 1 egg (optional)

First, finely chop the kimchi into bite-sized pieces, about 1-1.5 cm. Chopping it smaller will make it easier to stir-fry. Prepare the kimchi by cutting it into suitable pieces.

Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped green onions and stir-fry slowly. This process infuses the oil with the aromatic flavor of the green onions, creating a delicious scallion oil. Be careful not to burn them; stir gently until fragrant.

Once the scallion oil is ready, carefully crack an egg into one side of the pan (optional) and scramble it. Alternatively, you can add the egg at the very end, after the kimchi and rice are cooked.
