Ingredients
- 6 dumplings (choose your favorite kind)
- 1 egg
- 1/2 stalk green onion
- 500ml water (about 2.5 cups)
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce (for soup)
- 1.5 Tbsp fish sauce (anchovy or sand lance)
- 1 pinch salt (adjust to taste)
Cooking Instructions
Step 1
Prepare the dumplings. If using frozen dumplings, you can use them directly without thawing. Adjust the number of dumplings to your preference.
Step 2
Thinly slice the green onion diagonally. This preparation helps to release its fragrance into the soup.
Step 3
Crack the egg into a bowl. Beat it gently with a fork or chopsticks, breaking the chalaza (the white stringy bits), until well combined. A smooth, beaten egg will create beautiful ribbons in the soup.
Step 4
In a pot, combine the water (500ml), prepared dumplings (6), minced garlic (1 Tbsp), soy sauce (1 Tbsp), fish sauce (1.5 Tbsp), and a pinch of salt. Bring to a boil over high heat.
Step 5
Once the soup comes to a rolling boil, slowly drizzle the beaten egg in a circular motion around the edges of the pot. Allow the egg to cook and set into delicate ribbons without stirring immediately.
Step 6
As the egg begins to cook, add the sliced green onions to the pot and simmer for another moment until the green onions are slightly softened and their aroma has infused the broth. Turn off the heat and serve immediately. You can add a dash of black pepper if you like.
