Delicious Mountain Vegetable Rice Cooker Rice (Sotbap)
Aromatic Mountain Vegetable Rice Cooker Rice Bowl
Enjoy a delightful and fluffy rice cooker rice (sotbap) made with plenty of mountain vegetables, served in convenient 1-serving baby woks. We’ve also prepared a savory seasoning sauce to perfectly complement the rice. Mix this sauce into your sotbap, top with kimchi or pickled radish, and experience pure bliss! ^^
For Cooking the Rice- 2 servings soaked rice
- 2 cups water (or equal to rice volume)
- 2 handfuls prepared mountain vegetables
- A little sesame oil or perilla oil (for greasing)
Cooking Instructions
Step 1
First, rinse the rice thoroughly and let it soak for at least 30 minutes. Prepare 2 servings of soaked rice and two 1-serving woks (baby woks). (Lightly greasing the bottom of the woks with sesame oil or perilla oil can prevent the rice from sticking.)
Step 2
Divide the soaked rice equally between the prepared 1-serving woks.
Step 3
Pour water into the woks, using a 1:1 ratio of rice to water. This ratio is generally ideal for perfectly cooked soaked rice. (e.g., 1 cup of rice requires 1 cup of water)
Step 4
Gently place one handful of the prepared mountain vegetables on top of the rice in each wok. You can lightly press them down to help them integrate with the rice.
Step 5
Cover the woks with their lids and cook over medium-high heat until the water starts to boil. This usually takes about 5-7 minutes.
Step 6
Once the water boils vigorously, reduce the heat to medium. It’s important to let the rice simmer until steam gently rises.
Step 7
When the water has reduced somewhat over medium heat, carefully open the lid and gently stir the rice. (This ensures the vegetables and rice are evenly mixed.) Then, cover the lid again and reduce the heat to low to continue cooking the rice.
Step 8
Continue cooking on low heat for another 8 minutes. Once the rice is cooked and most of the water has evaporated, turn off the heat. Let the rice steam, covered, for 2-5 minutes to finish cooking.
Step 9
While the rice is steaming, prepare the delicious seasoning sauce. Finely mince the white part of the green onion, onion, green chili, and red chili. In a bowl, combine the soy sauce, minced green onion, minced onion, minced green and red chilies. Add the sesame oil, perilla oil, and toasted sesame seeds, then mix well to create a flavorful sauce.
Step 10
Serve the freshly cooked mountain vegetable rice in the woks directly to the table, along with the prepared seasoning sauce. Kimchi or pickled radish are perfect accompaniments for a complete meal. ^^
Step 11
Add a desired amount of the seasoning sauce to the warm rice and gently mix, being careful not to mash the rice or vegetables. Enjoy the aromatic mountain vegetables and perfectly fluffy rice with every bite.
Step 12
For an extra treat, you can add a fried egg on top of the rice before mixing. Alternatively, a touch of gochujang (red chili paste) can add a spicy kick and a different dimension to your dish. ^^
