How to Make Omurice: An Easy and Delicious Home-Style Recipe
Whip up a delightful omurice with simple ingredients you likely have on hand! This recipe uses leftover vegetables and is perfect for a quick and satisfying meal. Enjoy the perfect combination of flavorful fried rice and a soft, fluffy omelet.
Main Ingredients- 1/2 Onion
- 1/2 Potato
- 1/4 Carrot
- 50g Ham (or sausage)
- 2 Eggs
Fried Rice Seasoning- 3 Tbsp Ketchup
- 3 Tbsp Tonkatsu Sauce
- 1 Tbsp Oligosaccharide
- 1/2 cup Water (approx. 100ml)

Cooking Instructions
Step 1
First, prepare the ingredients for the fried rice filling. Feel free to use any vegetables you have in your refrigerator! Peel the potato before you begin.
Step 2
Finely chop the onion, potato, carrot, and ham (or sausage) into small, uniform pieces. This ensures they cook evenly and incorporate well into the rice, making for a tastier filling.
Step 3
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the potato and carrot first, as they take longer to cook. Sauté until they become tender and slightly translucent.
Step 4
Once the potatoes and carrots are starting to turn transparent, add the chopped onion to the pan. Continue to stir-fry until the onions become translucent and sweet.

Finally, add the ham (or sausage) and stir gently until all the ingredients are well combined. The fat rendered from the ham will add extra flavor as it cooks with the vegetables.

To prepare the soft omelet, crack two eggs into a bowl. Whisk them gently with a fork or whisk until just combined. You don’t need to over-whisk them.

Temporarily set the sautéed vegetables aside. Add about one bowl (approx. 200g) of cooked rice to the same pan. Stir-fry the rice until it becomes fluffy and slightly dry. If the rice tastes bland, season it lightly with salt at this stage.

Add all the fried rice seasoning ingredients (ketchup, tonkatsu sauce, oligosaccharide, and water) to the fried rice. Increase the heat to high and stir-fry quickly to coat the rice grains evenly with the sauce. This rapid stir-frying is key!
Step 9
Now for the star of the show: the beautiful omelet! Heat a clean non-stick pan over low heat. Pour in enough of the beaten egg to create a thin layer. As the egg begins to set around the edges but is still moist on top, gently tilt the pan to spread the egg evenly. Avoid stirring with a utensil.
Step 10
When the egg is about 80% cooked and still slightly wet on top, carefully spoon the fried rice onto one half of the omelet. Be mindful not to overfill, as it can make folding difficult and affect the presentation.
Step 11
Gently fold the other half of the omelet over the rice, using chopsticks or a spatula to help shape it. This creates the characteristic omurice fold. You’re almost there – it already looks delicious!

Transfer the finished omurice to a serving plate. I like to add a generous drizzle of ketchup for extra flavor! You can also add mayonnaise or a sprinkle of parsley if you like.
