- 1 cup oysters (cleaned)

First, wash the fall radish thoroughly, peel it, and then julienne it into thick strips. Cutting it too thinly might cause it to become mushy during cooking, so slightly thicker cuts will help maintain a pleasant texture.

We’ll be cooking this rice in a pot. Rinse 2 cups of rice until the water runs clear. (I used freshly harvested rice and didn’t soak it, but if you’re using regular rice or prefer softer grains, soak it for about 30 minutes beforehand.) Once rinsed, spread the thick radish strips evenly over the rice in the pot.

Now, let’s add the water for cooking. Pour in 2 cups of water, matching the amount of rice. Close the lid tightly and bring the water to a boil over high heat. Wait until you hear the rice bubbling vigorously.

Overcooking the oysters can diminish their sweetness and make them rubbery, so letting them cook gently in the residual heat of the rice is best.
