Delicious Oyster Rice Cooked in a Casserole with Seasonal Oysters
How to Make Oyster and Radish Rice Casserole
We’re making oyster and radish rice casserole with the freshest seasonal oysters! This recipe uses a cast-iron pot for a wonderfully textured rice. The combination of tender oysters, crisp radish, and fragrant aromatics creates a truly satisfying meal. Enjoy a hearty and flavorful bowl of freshly cooked oyster rice!
Rice Ingredients- 1.5 servings of regular rice (Japonica)
- 0.5 servings of glutinous rice (sweet rice)
Oyster Casserole Ingredients & Seasoning- 1 cup fresh oysters
- A little bit of radish (julienned)
- 1/2 red chili pepper (seeds removed, finely chopped)
- 1 green chili pepper (seeds removed, finely chopped)
- 5cm green part of a scallion (finely chopped)
- 1.5 Tbsp soy sauce
- 1/3 Tbsp sesame oil
- 1/2 Tbsp crushed toasted sesame seeds
- 1 cup fresh oysters
- A little bit of radish (julienned)
- 1/2 red chili pepper (seeds removed, finely chopped)
- 1 green chili pepper (seeds removed, finely chopped)
- 5cm green part of a scallion (finely chopped)
- 1.5 Tbsp soy sauce
- 1/3 Tbsp sesame oil
- 1/2 Tbsp crushed toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the rice for cooking. Combine the regular rice and glutinous rice in a bowl, rinse gently, and then drain in a sieve. Let it soak for at least 30 minutes. Soaking the rice will make the grains more tender and chewy.
Step 2
Wash the radish, peel it, and then julienne it into pieces similar in length and thickness to the rice grains. The radish will add a subtle sweetness and refreshing taste to the rice as it cooks.
Step 3
Now, add the soaked rice to the cast-iron pot. Spread the julienned radish evenly over the rice. The amount of water for cooking the rice should be slightly less than usual. The standard ratio is 1:1 rice to water, but since the radish will release moisture, use about 2/3 cup of water for each cup of rice, for a total of 1 and 2/3 cups of water.
Step 4
Close the lid of the cast-iron pot securely and bring it to a boil over medium heat for 10 minutes. Once steam starts to escape, slightly reduce the heat and let it cook evenly.
Step 5
After 10 minutes, open the lid. You’ll see that the radish has become tender yet still slightly crisp. The rice grains should now be absorbing the water and starting to separate.
Step 6
Carefully place the cleaned fresh oysters on top of the rice. Once the oysters are added, cover the pot again and cook for another 7 minutes. After turning off the heat, let the rice steam, covered, for 10 minutes without opening the lid. This steaming process allows the delicious oyster juices to meld with the rice, creating a deeply flavorful oyster rice.
Step 7
Meanwhile, while the rice is steaming, prepare the seasoning sauce. Finely mince the red and green chili peppers after removing their seeds. Finely chop the green parts of the scallion. (Using chopped scallions or chives is also a great option if available.) In a bowl, combine the minced chili peppers, chopped scallions, soy sauce, sesame oil, and crushed toasted sesame seeds. Mix well to create a delicious seasoning sauce.
