A Must-Have Holiday Dish: Pan-Fried Dried Croaker Fillets
This is a special dish that my husband insists on having during the holidays – Pan-Fried Dried Croaker Fillets! We got three generous bundles of dried croaker fillets, expertly prepared at the fish market alley in Masan. This dish is crispy on the outside and tender on the inside, loved by everyone!
Main Ingredients- 3 bundles of fresh dried croaker fillets (purchased at Masan Fish Market)
Batter and Seasoning- 8 eggs

- 2 onions (juice only)

Cooking Instructions
Step 1
First, to remove any fishy smell and enhance the flavor, lay out the dried croaker fillets one layer at a time on a round plate. Lightly brush them with the strained juice from the grated onions. The onion juice will neutralize any unpleasant odors and add a savory depth. Letting them marinate for about 10 minutes is recommended.
Step 2
Once marinated with onion juice, coat the dried croaker fillets evenly with flour on both sides. Then, stack them neatly, about 7 fillets per stack. This portioning makes it convenient to cook them in batches on your frying pan.
Step 3
In a separate bowl, crack 8 eggs. Add 2 pinches of salt per egg and whisk them well. Seasoning the eggs beforehand will make the pan-fried fillets even more delicious. Whisk using chopsticks or a whisk until smooth and no lumps remain.
Step 4
Now it’s time to pan-fry. Heat a generous amount of oil in a frying pan over medium heat. Dip each stack of flour-coated croaker fillets into the beaten egg, ensuring they are fully coated, and then carefully place them in the hot oil. Pan-fry until golden brown on both sides.
