Let’s make a delightful pepper stir-fry at home! This dish is a classic Chinese delicacy and pairs exceptionally well with soft, fluffy steamed buns (Hua Juan). We’ve prepared a simple yet flavorful recipe that combines tender meat with vibrant vegetables for a satisfying meal.
Ingredients for Pepper Stir-fry
- Beef for stir-fry, 90g
- Red bell pepper, 1
- Green bell pepper, 1
- Onion, 1/3
- Oyster mushrooms, 100g
- Cornstarch, 1 tsp
- Minced garlic, 1/4 Tbsp
- Soy sauce, 1 tsp
- Sugar, 1/2 tsp
- Oyster sauce, 1 Tbsp
- Black pepper, a pinch
- Sesame oil, a little
- Toasted sesame seeds, a little
Cooking Instructions
Step 1
First, prepare the beef for stir-fry. Gently pat it dry with paper towels to remove excess moisture. In a bowl, combine the beef with 1 tsp soy sauce, 1/2 tsp sugar, a pinch of black pepper, and 1/4 Tbsp minced garlic. Mix well by hand until the beef is evenly coated. This marinating step will tenderize the meat and allow the flavors to penetrate.
Step 2
Rinse the oyster mushrooms lightly under running water and then tear them into bite-sized pieces along their natural lines. Wash the onion, green bell pepper, and red bell pepper. For the onion and green bell pepper, slice them into 2-3 cm long julienne strips. For the red bell pepper, remove the seeds and then julienne it to match the size of the green bell pepper for a visually appealing dish.

To the marinated beef, add 1 tsp of cornstarch and mix thoroughly. Coating the beef with cornstarch helps to create a tender texture and prevents it from clumping together during the stir-frying process.

Heat 1-2 Tbsp of cooking oil in a wok or large pan over high heat. Add the marinated beef and stir-fry quickly until the surface turns opaque and about 80% cooked. Be careful not to overcook, as this can make the beef tough.

Once the beef is about 80% cooked, add the sliced onion and oyster mushrooms to the pan. Stir-fry rapidly over high heat to retain the crispness of the vegetables. As the vegetables begin to soften slightly, add 1 Tbsp of oyster sauce to enhance the savory flavor.

Next, add the julienned green and red bell peppers. Continue to stir-fry for about 1 minute, ensuring all the ingredients are well combined and evenly coated. The key is to cook quickly over high heat so the vegetables remain slightly crisp.
