Ingredients

  • 1 handful dried seaweed (approx. 10g)
  • 1 handful dried pollock (Hwangtae-po, approx. 20g)
  • 1/2 tsp minced garlic
  • 1 tsp soup soy sauce (Guk-ganjang)
  • 2 tsp perilla oil (Deulgireum)

Cooking Instructions

Step 1

First, soak 1 handful of dried seaweed in cold water for about 10 minutes until rehydrated. Rinse the soaked seaweed thoroughly, squeeze out excess water, and cut it into bite-sized pieces.

Step 1

Step 2

Briefly soak 1 handful of dried pollock (Hwangtae-po) in water until softened. Carefully check for and remove any small bones, then tear or cut it into manageable pieces.

Step 2

Step 3

Heat 2 tsp of perilla oil in a pot over medium heat. Add the prepared seaweed and stir-fry until it softens and wilts, about 2-3 minutes. This step helps develop its texture and flavor.

Step 3

Step 4

Once the seaweed is softened, add the prepared dried pollock to the pot. Continue to stir-fry together for about 1 more minute. This allows the flavors of the pollock to meld with the seaweed.

Step 4

Step 5

Add 1 tsp of soup soy sauce (Guk-ganjang) to the stir-fried seaweed and pollock. Stir-fry for another minute, allowing the soy sauce to coat and slightly caramelize on the ingredients for a deeper taste.

Step 5

Step 6

Pour 600ml of rice water (or kelp broth) into the pot with the stir-fried seaweed and pollock. Using rice water will give the soup a smoother, richer flavor profile.

Step 6

Step 7

Bring the soup to a boil over high heat. Add 1/2 tsp of minced garlic. Once boiling, reduce the heat to medium-low and simmer for about 5 minutes, allowing the flavors to fully infuse.

Step 7

Step 8

Finally, season the soup with soup soy sauce or salt to taste. Adjust the seasoning as needed. You can add more soup soy sauce or salt if the flavor is not quite right.

Step 8

Step 9

Your delicious and milky-looking Pollock Roe Seaweed Soup is now ready! The dried pollock adds a wonderful umami without any fishiness, resulting in a deep and refreshing broth. Enjoy this hearty soup with a bowl of warm rice!
