Main Ingredients
  • 2 cups cooked rice
  • 1.5 cups grilled pork belly, chopped
  • 1 cup kimchi, finely chopped
  • 1 egg (optional)

Seasonings and Other Ingredients
  • 1 Tbsp garlic-ginger oil or grapeseed oil
  • 1 tsp oyster sauce (adjust to taste)
  • A little fresh scallion, shredded (for garnish)

Cooking Instructions

Step 1

First, prepare the cooled grilled pork belly by chopping it into bite-sized pieces. Gently warm it in a pan to soften the meat. (Be careful not to overheat, as it can become tough!)

Step 2

Using scissors or a knife, cut the warmed pork belly into small pieces. Cutting them to about 1cm in size will help them blend well with the rice.

Step 3

In a heated pan, add the chopped kimchi and stir-fry over medium heat until well cooked. It’s important to sauté the kimchi until it becomes tender and absorbs the seasoning. The delicious aroma that arises as the kimchi cooks will whet your appetite.

Step 4

Once the kimchi is sautéed, push it to one side of the pan, add the garlic-ginger oil (or grapeseed oil), and then add the cooked rice. Stir-fry the rice until each grain is coated with oil and becomes fluffy. This is key to achieving a great texture.

Step 5

When the rice and kimchi are well combined, add the oyster sauce and adjust the seasoning to your preference. Gently toss the rice with a spatula to prevent clumping. (You can add salt or soy sauce if needed after tasting.)

Step 6

Transfer the finished kimchi fried rice to a preheated cast iron pan or a regular pan for serving. Finally, generously top with fresh shredded scallions for added aroma and a satisfying crunch. Adding a fried egg on top is also a wonderful option.
