Pork Rib Ingredients- Pork (ribs or your preferred cut) 600g
- Water 90ml (less than 1/2 cup)
- Soy sauce 6 Tbsp
- Sugar 3 Tbsp
- Sesame oil 2 Tbsp
- Black pepper 0.3 Tbsp (approx. 1/3 Tbsp)
- Minced garlic 2 Tbsp
- Oligosaccharide 2 Tbsp (or corn syrup)
- Mirin (rice wine) 4 Tbsp
- Ginger syrup 3 Tbsp (or 1/2 tsp minced ginger + 1 Tbsp sugar)

Step 1
First, prepare the pork. While ribs are the most common cut, you can also use pork neck or belly for a different texture. Score the surface of the meat with shallow cuts. This helps the marinade penetrate better and makes the meat more tender when cooked. Aim for cuts about 0.5cm apart, ensuring they aren’t too deep.
