Kid-Friendly Snack: Easy Potato Bread Pizza
A hearty and nutritious snack for both kids and adults, topped generously with cheese. This potato pizza is a delightful treat everyone will love.
Ingredients- 2 slices of bread
- 8 small potatoes (or 2 regular potatoes)
- A little olive oil
- 2 Tbsp tomato sauce
- 2 eggs
- 2 Tbsp mayonnaise (or to taste)
- A pinch of salt
- A pinch of pepper
- 2 Tbsp chopped red bell pepper
- 2 Tbsp chopped yellow bell pepper
- 1 cup pizza cheese (or to taste)
- A little parsley flakes (optional)
Cooking Instructions
Step 1
First, thoroughly wash and peel the small potatoes (or regular potatoes), then boil them until tender. Hard-boil the eggs as well. While still warm, mash the boiled potatoes and eggs together until smooth. Mix in the mayonnaise, salt, and pepper until well combined to create the potato filling. Taste and adjust the seasoning as needed.
Step 2
Prepare two slices of bread. Spread tomato sauce evenly over one slice to form the pizza base. On the other slice, spread a thin layer of mayonnaise for extra richness. Generously layer the mashed potato filling over both slices. Sprinkle the chopped red and yellow bell peppers evenly over the potato mixture for a colorful touch. Finally, top generously with pizza cheese. Don’t be shy with the cheese if you love it!
Step 3
Preheat your oven to 200°C (400°F). Place the prepared bread pizzas in the oven and bake for about 7 minutes, or until the pizza cheese is melted and bubbly with a light golden hue. Cooking times may vary depending on your oven. If you don’t have an oven, you can also cook this in a skillet over low heat with a lid on until the cheese is melted.
