Cupcake Batter Ingredients

  • 2 Tbsp Strawberry Powder
  • 180g Cake Flour (or all-purpose)
  • 70g Butter (room temperature)
  • 50g Sugar
  • 4g Baking Powder
  • 2 Eggs (room temperature)
  • 1/2 cup Milk (approx. 100ml)
  • 1-2 drops Vanilla Extract

Cream Cheese Topping Ingredients

  • 2 Tbsp Cream Cheese (room temperature)
  • 2 Tbsp Powdered Sugar
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Strawberry Powder

Cooking Instructions

Step 1

First, place the softened room-temperature butter in a bowl and cream it until smooth using a whisk. Gradually add the sugar in 2-3 additions, continuing to whip until the sugar crystals are no longer gritty and the butter becomes light and creamy, like an ivory color. Next, add the room-temperature eggs one at a time, whipping well after each addition to ensure they are fully incorporated and the mixture doesn’t curdle.

Step 1

Step 2

Add the cake flour and baking powder, which have been sifted twice for extra lightness, to the butter-egg mixture. Gently fold them in using a spatula or whisk until just combined and no dry streaks remain. Be careful not to overmix, as this can make the cupcakes tough. The key is to mix just until the flour disappears.

Step 2

Step 3

Pour in the milk and vanilla extract, and gently mix again until just incorporated. Ensure the milk is at room temperature; cold milk can cause the butter in the batter to seize.

Step 3

Step 4

Finally, add the strawberry powder and whisk until it’s evenly distributed throughout the batter, giving it a lovely pink hue. If you want a more intense strawberry flavor, consider using freeze-dried strawberry powder.

Step 4

Step 5

Transfer the batter to a piping bag. Line a muffin tin with paper liners and fill each cup about two-thirds full with batter. Overfilling will cause them to overflow during baking. Gently tap the muffin tin on the counter 2-3 times to release any large air bubbles. Bake in a preheated oven at 180°C (350°F) for 25-30 minutes, or until a skewer inserted into the center comes out clean.

Step 5

Step 6

While the cupcakes are baking, let’s prepare the creamy and delicious cream cheese topping! Having it ready while the cupcakes bake saves time.

Step 6

Step 7

In a bowl, combine the room-temperature cream cheese, powdered sugar, lemon juice, and strawberry powder. Mix until smooth and creamy, ensuring there are no lumps of powdered sugar. Once well combined, transfer the topping mixture into a piping bag. Using a star tip will help you create beautiful decorations.

Step 7

Step 8

Once the cupcakes have cooled completely, pipe the cream cheese topping onto them. Piping in a spiral motion, like a snail shell, creates a lovely, voluminous look. A light dusting of extra strawberry powder can be used for garnish. Enjoy your delightful homemade strawberry cupcakes!
