Delicious Rockfish Grill: Simple Recipe with a Savory Dipping Sauce
How to Make Simple Grilled Rockfish and a Flavorful Fish Dipping Sauce
For those who find grilling fish a bit challenging, I’ve prepared a simple yet incredibly delicious grilled rockfish recipe. Especially, the special fish dipping sauce with a hint of chili peppers adds a delightful kick. Enjoy perfectly crispy-skinned and tender rockfish without any complicated steps!
Main Ingredients- 2 Rockfish (Sebastes schlegelii)
Cooking Instructions
Step 1
If your rockfish is frozen, take it out of the freezer and let it sit at room temperature for about 20 minutes to thaw naturally. This helps the fish cook evenly throughout.
Step 2
Once thawed, sprinkle the rockfish generously with black pepper for seasoning. If you plan to dip it in the soy sauce, add just a tiny pinch of salt – about two pinches. Be careful not to add too much, as the dipping sauce is also salty.
Step 3
Heat a generous amount of cooking oil in a frying pan. Place the rockfish skin-side down first. Grilling the skin until it’s golden brown and crispy is key.
Step 4
Once the skin is nicely browned, reduce the heat to medium-low and cover the pan with a lid. This prevents oil splattering and allows the fish to cook through gently. Cook for about 5-7 minutes, then flip once or twice to grill the other side until golden brown.
Step 5
By cooking over medium-low heat with the lid on, I’ve managed to grill the rockfish beautifully without worrying about splattering oil. The flesh separates easily, and the fish is perfectly tender and golden.
Step 6
Now, let’s make the special dipping sauce. This sauce is a fantastic accompaniment to the grilled rockfish. I’m using a thick soy sauce, similar to one used for sashimi, as the base. To this, I’m adding finely chopped green chili peppers for a spicy kick. Feel free to adjust the amount of chili peppers to your preference.
Step 7
Dip the tender flakes of the grilled rockfish into this savory and spicy sauce. The sharp heat from the chili peppers combined with the umami of the soy sauce creates a truly wonderful flavor experience. Enjoy this special grilled fish dish with minimal effort!
