- 1/4 onion, finely chopped or thinly sliced
- 2 Tbsp soy sauce
- 4 Tbsp mirin (rice wine)
- 1 Tbsp sesame oil
- Sesame seeds, to taste
- 1/4 onion, finely chopped or thinly sliced
Cooking Instructions
Step 1
First, let’s prepare the scrambled eggs for the bibimbap. Crack 2 eggs into a bowl, add a pinch of salt, and whisk them well. Removing the chalazae (the stringy bits) will result in a smoother texture.
Step 2
Heat a non-stick pan over medium-low heat. Pour in the whisked eggs and scramble them. Use a spatula or chopsticks to gently stir and break up the eggs as they cook, forming fluffy curds. Be careful not to overcook them, as this will keep them moist.
Step 3
Drain the canned salmon using a sieve to remove excess oil. Set it aside. Thinly slice the cabbage after washing it thoroughly. This will add a delightful crunch to your bibimbap.
Step 4
Now, let’s make the delicious sauce for your salmon bibimbap! In a small bowl, combine 2 tablespoons of soy sauce, 4 tablespoons of mirin (or rice wine), and 1 tablespoon of sesame oil. Mix them well. Add the finely chopped or thinly sliced onion (about 1/4 of an onion) and a sprinkle of sesame seeds for extra flavor and aroma. You can adjust the amount of onion or omit it if you prefer.
Step 5
Time to assemble your lunch box! Start by placing a layer of warm rice at the bottom of the lunch container. Top the rice with the thinly sliced cabbage, followed by the fluffy scrambled eggs, and then a handful of fresh bean sprouts or mixed greens. Finally, generously place the drained canned salmon on top for a beautiful presentation. When you’re ready to eat, drizzle your homemade soy sauce mixture over the bibimbap and mix everything together to enjoy!
