Savory & Sweet Stir-Fry Sauce

  • 1 Tbsp Hot Sauce (approx. 15ml, adjust to taste)
  • 1 Tbsp Sugar (approx. 15ml)

Cooking Instructions

Step 1

First, prepare the vegetables for your sausage stir-fry. We’re using carrot, onion, and broccoli as a base, but feel free to add any other vegetables you like, such as zucchini, bell peppers, or cabbage. This is a great way to use up leftover veggies from your fridge!

Step 2

Chop all the prepared vegetables into bite-sized pieces. Slice the carrot and onion into thin strips or dice them, and break the broccoli into small florets. Cutting the vegetables into similar sizes will ensure they cook evenly, resulting in a more delicious dish.

Step 3

To remove any strong flavor from the broccoli and enhance its crispiness, it’s best to blanch it briefly. Bring a pot of water to a boil, add a pinch of salt and a drop of vinegar. Place the broccoli stems into the boiling water first and blanch for about 30 seconds, then add the florets and cook for another minute. This helps maintain a vibrant green color and preserves nutrients. After blanching, do not rinse with cold water; instead, let them cool naturally on a sieve. This method helps retain a bit of moisture, preventing the vegetables from drying out and keeping them satisfyingly crisp.

Step 4

Make shallow scores on the Vienna sausages. This helps the sauce penetrate better and prevents them from bursting during cooking. Briefly blanch the scored sausages in boiling water for about 1 minute. This step removes any surface impurities, leading to a cleaner taste.

Step 5

Heat some cooking oil in a pan over medium-high heat. Add the firmer vegetables first and stir-fry. Start with the carrots, sautéing them for a minute, then add the onions and cook until they become translucent. Next, add the blanched broccoli and the scored Vienna sausages, and continue to stir-fry everything together. Cooking the sausages until they are lightly browned will add extra flavor.

Step 6

Now it’s time to bring all the ingredients together with a delicious sauce! Add 3 Tbsp ketchup, 1 Tbsp oyster sauce, 1 Tbsp oligodang (or honey), 1 Tbsp hot sauce (adjust the amount based on your spice preference), and 1 Tbsp sugar to the pan. Reduce the heat to low and stir gently until the sauce is well combined and coats all the ingredients evenly. Be careful not to burn the sauce. Stir-frying until the mixture is glossy signifies that your delicious sausage and vegetable stir-fry is ready! Serve it over warm rice for a hearty meal or enjoy it as a simple side dish.
