  • 1/2 head of well-fermented Napa cabbage kimchi (chopped into bite-sized pieces)
  • 1/2 onion (sliced thinly)
  • 100g pork (ground or thinly sliced) (or use ham, sausages, etc.)
  • A little bit of green onion (chopped)

  • 1/2 Tbsp gochujang (or use seasoned gochujang)
  • 2 bowls of cooked rice
  • 2 Tbsp grapeseed oil or cooking oil

First, let’s prepare the star of our Kimchi Fried Rice: the kimchi! If your kimchi is very sour, you can lightly rinse it under running water to adjust the tanginess. Then, chop the well-fermented Napa cabbage kimchi into bite-sized pieces. If there’s too much juice, gently squeeze it out. Prepare your pork (or ham, sausages, etc.) and onion by slicing them thinly. Chop the green onions for garnish. Don’t hesitate to add any leftover vegetables you have in your fridge, like mushrooms, carrots, or zucchini – they make it even tastier!

Heat 2 tablespoons of grapeseed oil in a pan over medium-high heat. Add the pork and stir-fry until it’s mostly cooked. Then, add the chopped kimchi and sauté until it becomes tender and slightly softened. Stir in 1/2 tablespoon of gochujang (or seasoned gochujang) and cook until everything is well combined. Next, add the thinly sliced onions and cook until they turn translucent. Once all the ingredients are nicely sautéed, add 2 bowls of warm cooked rice. Using a spatula, break up any clumps of rice and gently mix it with the kimchi and other ingredients. Continue to stir-fry over medium heat until the rice is evenly coated and the ingredients are well incorporated. Cooking until the rice grains are slightly crispy is key for the best texture.
