Pork Neck Bulgogi Stir-fry – A Family Favorite

Main Ingredients
- 500g Pork Neck (sliced)
- 15 Perilla Leaves
- 1 Korean Green Chili Pepper
- 1 Red Chili Pepper
- 1 Large Green Onion
- 5 Cloves Garlic
- 1/4 Carrot
- 1/2 Onion
- 1/4 Pear (grated)
Seasoning
- 4 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 2 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Minced Garlic (optional, as garlic is sliced separately)
- Pinch of Black Pepper
- 1/2 tsp Green Tea Powder (for aroma and to remove gaminess)
- 1 Tbsp Plum Extract (for sweetness and flavor)
- 4 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 2 Tbsp Mirin (or Rice Wine)
- 1 Tbsp Minced Garlic (optional, as garlic is sliced separately)
- Pinch of Black Pepper
- 1/2 tsp Green Tea Powder (for aroma and to remove gaminess)
- 1 Tbsp Plum Extract (for sweetness and flavor)
Cooking Instructions
Step 1
First, prepare the vegetables. Wash the perilla leaves thoroughly, pat them dry, and cut them into large, 2-3 pieces each. Slice the green onion diagonally. Remove the seeds from the green and red chili peppers and slice them thinly into strips. Slice the garlic thinly (or mince it if preferred). Peel and thinly slice the carrot and onion into strips. Peel and finely grate the pear.
Step 2
Cut the pork neck into bite-sized pieces (about 2-3 cm). In a bowl, combine the pork with all the seasoning ingredients: soy sauce, sugar, mirin, minced garlic (if using), black pepper, green tea powder, and plum extract. Add the grated pear. Gently mix everything together with your hands, ensuring the pork is evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or preferably longer. Marinating makes the pork tender and allows the flavors to penetrate deeply.
Step 3
Once the pork has marinated well, add the prepared perilla leaves, green onion, chili peppers, carrot, and onion to the bowl. Gently mix again to combine the vegetables and pork. Let it sit for about 20 more minutes to allow the vegetables to absorb some of the marinade.
Step 4
Heat a frying pan over medium heat. Add all the marinated pork and vegetables to the pan. Stir and stir (Duruchigi means ‘stir-fry thoroughly’) with chopsticks or a spatula, ensuring everything is cooked evenly and doesn’t stick. Continue to stir-fry for about 15-20 minutes, or until the pork is fully cooked and the vegetables are tender-crisp. Adjust the heat as needed to prevent burning.
