Easy Recipe for Cocktail Shrimp Curry
This is a delicious shrimp curry rice recipe featuring sweet cocktail shrimp and a rich curry sauce. Instead of seasonal large shrimp, this recipe uses readily available cocktail shrimp to create a deeply flavorful curry. The subtle sweetness of the shrimp perfectly complements the spiciness of the curry, creating a fantastic harmony. Served over rice, it makes for a perfectly satisfying meal!
Main Ingredients
- 2 Onions
- 3 Potatoes
- 1 Carrot
- 1/2 Zucchini
- 1 King Oyster Mushroom
- 4 Curry Blocks (or commercial curry powder)
- 7 Fresh Cocktail Shrimp (peeled and deveined)
Cooking Instructions
Step 1
First, peel the onions and slice them thinly to about 0.5cm thickness. Heat a generous amount of cooking oil in a pan over medium heat. Add the onions and sauté them slowly until they become translucent and release a sweet aroma. Thoroughly sautéing the onions will significantly deepen the curry’s flavor.
Step 2
Wash and peel the potatoes, then dice them into bite-sized pieces (about 1.5cm). Add the diced potatoes and carrots to the sautéed onions and cook together for 2-3 minutes. Once the vegetables are slightly browned, pour in enough kelp broth (or water) to cover the ingredients. Using kelp broth adds an extra layer of umami and makes the curry even more delicious.
Step 3
Once the broth starts boiling, reduce the heat to medium-low and simmer until the potatoes are fork-tender (about 8-10 minutes). While that’s simmering, slice the zucchini into 0.5cm thick half-moons and slice the king oyster mushroom into 0.5cm thick pieces. Add the zucchini and king oyster mushrooms to the pot once the potatoes are adequately cooked, and simmer for a little longer. Then, add the curry blocks (4 blocks for this recipe, adjust according to package instructions) and stir well with a wooden spoon to dissolve them without lumps. It’s important to stir occasionally to prevent the curry from sticking to the bottom of the pot.
Step 4
Once the curry begins to thicken, the first stage of the curry is complete. Taste and adjust seasoning with salt or a bit more curry powder if needed.
Step 5
For family members who don’t enjoy shrimp, set aside some of the curry in a separate bowl. Add the prepared fresh cocktail shrimp to the remaining curry and simmer for just a short while until the shrimp turn pink (about 1-2 minutes). Be careful not to overcook the shrimp, as they can become tough. Turn off the heat to finish.
