Today’s Ingredients- 20 fresh whole shrimp
- 3 fresh eggs
- 30g carrot
- 20g red bell pepper
- 20g green onion (both white and green parts)
- 1 Tbsp cooking wine (mirin)
- 1/2 cup pancake mix (buchim garu)
- A little cooking oil (for frying)
Shrimp Seasoning Marinade- 2 pinches salt
- 2 pinches black pepper
- 1 Tbsp ginger wine (or cooking wine)

Cooking Instructions
Step 1
First, let’s prepare the vegetables that will add color. Finely mince the red bell pepper, the green parts of the green onion, and the carrot. Mincing the vegetables finely will make the texture and appearance of the jeon beautiful.
Step 2
Crack 3 eggs into a large bowl. Add 1 tablespoon of cooking wine and whisk until smooth and no lumps remain. Then, add the minced green onion, carrot, and red bell pepper, and stir everything together evenly.
Step 3
Now, let’s prepare the whole shrimp. Cut off the heads of the shrimp and peel them cleanly. Next, make a thin cut along the shrimp’s back to remove the vein. Then, gently pound the shrimp body with the back of a knife to flatten it. This will make the jeon tender and visually appealing when cooked.
Step 4
It’s best to leave the shrimp tails on for presentation. When deep-frying, it’s recommended to remove the ‘water gun’ (a sac of liquid) from the tail to prevent oil splattering. However, when making jeon, you don’t necessarily need to remove it, as it doesn’t cause significant oil splatter, so feel free to proceed.
Step 5
On the prepared shrimp, spread the measured amounts of salt (2 pinches), black pepper (2 pinches), and ginger wine (1 Tbsp). This seasoning will enhance the shrimp’s natural savory flavor. Let them marinate for a short while.
Step 6
Gently press the marinated shrimp with a kitchen towel to remove excess moisture. This is important because excess water will prevent the pancake mix from adhering properly. Then, lightly coat both sides of the shrimp with pancake mix. This will help the egg batter to stick well.
Step 7
Now, dip the shrimp, coated in pancake mix, into the egg mixture containing the vegetables. Ensure each shrimp is fully coated with the egg batter, making sure to cover the entire surface.
Step 8
Heat a pan over medium heat and add enough cooking oil. Carefully place the shrimp, coated in egg batter, one by one, making sure they don’t touch each other. Be mindful of the heat to prevent burning.
Step 9
Fry the shrimp, flipping them over to cook both sides until golden brown and cooked through. Your delicious shrimp jeon is complete! Be careful not to use heat that is too high, as it can burn the outside before the inside is cooked.

If you want to achieve a more vibrant and appealing yellow color for your shrimp jeon, try adding an extra egg yolk when whisking the eggs. This will result in a more vivid yellow hue, making your shrimp jeon look even more appetizing.
