- 1.5 Tbsp Gochujang (Korean chili paste, generously packed)
- 1/2 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 1/2 Tbsp Minced Garlic (freshly minced)
- 1 Tbsp Plum Extract (or other sweetener)
- 1 tsp Ginger Syrup (optional, can be omitted)
Cooking Instructions
Step 1
First, the foundation of delicious tteokbokki is the broth! Prepare a rich broth made from anchovies and kelp. Pour about 500ml of this broth into a pot and bring it to a rolling boil over high heat. Once the broth is boiling, get ready to add the next ingredients.
Step 2
As the broth comes to a vigorous boil, add the soft rice cakes (mill-tteok). These rice cakes are wonderfully chewy and absorb the broth exceptionally well, making them perfect for soupy tteokbokki. Gently stir to prevent them from sticking together.
Step 3
Now it’s time to add the fish cakes. Briefly blanching the fish cakes in hot water helps remove excess oil, resulting in a cleaner-tasting broth. Cut the fish cakes into bite-sized pieces and add them to the boiling broth. Cook together for about 2-3 minutes until both the rice cakes and fish cakes are tender.
Step 4
It’s time to season! Add the gochujang, soy sauce, minced garlic, plum extract, and ginger syrup to the pot. Stir well to combine everything evenly. Simmer for another 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly. Your delicious soupy tteokbokki is ready! Isn’t that incredibly easy?
