Sweet & Savory Soy Glaze- Soy Sauce 3 Tbsp
- Oligosaccharide Syrup (or Corn Syrup) 2 Tbsp (for shine and sweetness)

- Water 2 Tbsp
- Minced Garlic 1 Tbsp
- Plum Extract 2 Tbsp (adds umami and aroma)

Cooking Instructions
Step 1
First, rinse the chicken wings thoroughly under running water. Lightly score the chicken wings 2-3 times with a knife; this helps the glaze penetrate better. To effectively remove any gamey odor, soak the chicken wings in milk for 30 minutes. The milk proteins absorb impurities and odors from the chicken.

After soaking in milk for 30 minutes, rinse the chicken wings again under running water to remove any milk residue.

Before starting the soy glazing, parboiling the chicken wings will result in a cleaner and more tender texture. Place the chicken wings in a pot and add 1-2 tablespoons of mirin or soju, which are effective in removing gamey odors.

Once the water boils, parboil the chicken wings for exactly 3 minutes. Boiling for too long can cause the chicken’s juices to escape, so sticking to the time is crucial!
