Delicious Soy Sauce Marinated Duck Bulgogi

I’ve made a soy sauce marinated bulgogi using duck, which is enjoyable even for children. Its savory and sweet flavor makes it a wonderful side dish for rice or a special meal.

Main Ingredients

  • 500g sliced duck meat
  • 1 onion (sliced)
  • 1 handful of chives (cut into 5cm lengths)
  • 200g mushrooms (sliced)
  • 1/2 stalk of green onion (sliced diagonally)

Marinade Ingredients

  • 8 Tbsp soy sauce
  • 3 Tbsp sugar (adjust sweetness to your preference)
  • 2 Tbsp sesame oil
  • Pinch of black pepper
  • 1 Tbsp minced garlic
  • 1 Tbsp cooking wine (e.g., Cheongju)

Cooking Instructions

Step 1

Let’s start by making the delicious marinade, the key to this duck bulgogi. Pour 8 tablespoons of soy sauce into a large bowl.

Next, add 3 tablespoons of sugar. I like it a bit sweet, so I used 3 tablespoons, but you can adjust the amount of sugar based on your family’s taste or your preferred level of sweetness. If you prefer a cleaner sweetness, you can also use corn syrup or honey.

Now, add 2 tablespoons of sesame oil for aroma, a pinch of black pepper to remove any gamey odor, 1 tablespoon of minced garlic for a pungent kick, and 1 tablespoon of cooking wine (like Cheongju) for tenderness and to further eliminate odors.

Add the 500g of sliced duck meat to the prepared marinade and mix well by massaging it with your hands. Letting it marinate in the refrigerator for at least 30 minutes will allow the flavors to penetrate the meat, making it much tastier. If you have the time, marinating for over an hour is recommended.

Lightly oil a heated pan and add the marinated duck meat. Stir-fry over medium heat. Use chopsticks or tongs to separate the duck slices so they don’t stick together as they cook.

When the duck is about 80% cooked and has changed color, add the sliced onion and stir-fry together. Continue cooking until the onions become translucent and release their sweet aroma.

Once the onions are cooked to your liking, add the prepared mushrooms. Stir-fry quickly, as mushrooms release water if overcooked. Cook for about 1 minute, just until they soften slightly.

Finally, add the diagonally sliced green onions and the cut chives. Stir-fry rapidly over high heat for a quick toss – and your delicious soy sauce marinated duck bulgogi is complete! Add them right before turning off the heat to maintain the crispness of the vegetables and their fresh aroma. Serve it over warm rice and enjoy!
