Main Ingredients- 2 frozen squids (cleaned and prepared)
- 1/2 green onion (use only the white part)
- 2 cloves garlic (minced)
- A little carrot (thinly julienned)
- 1/2 onion (thinly julienned)
Seasoning Ingredients- 3 Tbsp soy sauce
- 1 Tbsp plum extract
- 1/3 Tbsp ginger syrup
- 1 Tbsp cooking wine or soju
- 1/2 Tbsp perilla oil
- 1/2 Tbsp cooking oil
- 3 Tbsp soy sauce
- 1 Tbsp plum extract
- 1/3 Tbsp ginger syrup
- 1 Tbsp cooking wine or soju
- 1/2 Tbsp perilla oil
- 1/2 Tbsp cooking oil
Cooking Instructions
Step 1
First, finely chop the green leafy part of the green onion and set aside. Heat 1/2 Tbsp cooking oil in a wide pan over medium-low heat and sauté the chopped green onion to create green onion oil. Once the fragrant aroma of the green onion rises, add the minced garlic and julienned carrots. Stir-fry over low heat to prevent the garlic from burning and to enhance the flavor.
Step 2
We’ll be using frozen squid for this recipe. Thaw the frozen squid under running water, then peel off the skin and cut it into bite-sized pieces. Making crosswise scores on the squid will help the sauce penetrate better and give it a nice appearance when cooked. Add the prepared squid to a preheated pan over high heat and stir-fry quickly.
Step 3
Squid can become tough and release a lot of moisture if overcooked, so cooking it quickly over high heat is crucial. When the squid is almost cooked, add the sliced onion and quickly toss to combine. Stir-fry just until the onion becomes slightly translucent to maintain its crisp texture.
Step 4
Now it’s time to add the flavor. Add 3 Tbsp soy sauce, 1 Tbsp plum extract, 1/3 Tbsp ginger syrup, and 1 Tbsp cooking wine (or soju) to the pan. Stir-fry quickly over high heat. Make sure to mix the sauce evenly with the squid and vegetables by tossing rapidly. Be careful not to let the sauce reduce too much.
Step 5
Finally, drizzle in 1/2 Tbsp perilla oil for a nutty aroma and turn off the heat. You can also add a little sesame oil. Serve the finished soy sauce stir-fried squid over warm rice as a delicious rice bowl, or enjoy it as a delightful side dish!
