  • Cooked rice (freshly made or leftover) – 2 servings
  • Spam or Luncheon Meat – 1 small can
  • Chives – 1 handful
  • Eggs – 4

Seasoning & Additional Ingredients

  • Kimchi (well-fermented) – about 1 cup
  • Gochugaru (Korean chili flakes) – 1 Tbsp (adjust based on kimchi’s spiciness)
  • Sesame oil – 2 Tbsp
  • Sesame seeds – 1 Tbsp
  • Cooking oil – a little (for stir-frying)

Cooking Instructions

Step 1

First, prepare all the ingredients for the fried rice by washing them thoroughly. Dice the Spam into bite-sized pieces and finely chop the chives after washing. Finely chop the kimchi with scissors or a knife.

Dice the prepared Spam into small cubes, about 1 cm in size, so they mix well into the fried rice. Finely chop the chives into 1 cm lengths.

Heat a little cooking oil in a pan over medium heat and stir-fry the kimchi first. Once the kimchi is softened, add 1 Tbsp of gochugaru to enhance the spiciness, and stir-fry together. (You can skip this step if your kimchi is already sufficiently fermented and spicy).

Add the diced Spam to the pan with the kimchi and stir-fry. Once the Spam is lightly browned, add the rice. Use a spatula to break up any clumps of rice and stir-fry until everything is well combined with the kimchi and Spam. It’s important to break up the rice grains so they don’t clump together.

Once the rice, kimchi, and Spam are well stir-fried, add the chopped chives and stir gently to combine. Be careful not to overcook the chives, as they can become wilted and lose their flavor. Just cook them briefly until they soften.

Finally, just before turning off the heat, drizzle in 2 Tbsp of sesame oil and 1 Tbsp of sesame seeds. Stir once more to distribute evenly. The nutty aroma of sesame oil and the crunchy texture of sesame seeds will make your fried rice even more delicious.
