Main Ingredients
  • Spam 200g (1 can)
  • 1/2 Onion
  • 4 Scallions (green onions)
  • 6 Eggs
  • A pinch of sesame seeds
  • Mayonnaise, to drizzle
  • 3 Tbsp Vegetable oil
  • 2.5 bowls Cooked rice

Special Rice Bowl Sauce
  • 1.5 Tbsp Soy sauce
  • 3 Tbsp Mirin (or rice wine)
  • 1 Tbsp Sesame oil
  • 0.5 Tbsp Sugar

Cooking Instructions

Step 1

First, crack 6 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them gently with a fork or whisk until smooth. Don’t worry about over-whisking.

Step 2

Dice the 200g Spam into roughly 1cm cubes. Thinly slice the 1/2 onion, and finely chop the 4 scallions for garnish.

Step 3

Heat 3 tablespoons of vegetable oil in a pan over medium-low heat. Add the sliced onion and sauté until it becomes translucent. This step helps bring out the onion’s natural sweetness.

Step 4

Once the onion is softened, add the diced Spam to the pan and stir-fry together. The Spam will release its own delicious fat, adding to the flavor.

Step 5

When the Spam and onion are nicely browned, pour in all the prepared rice bowl sauce ingredients: 1.5 Tbsp soy sauce, 3 Tbsp mirin, 1 Tbsp sesame oil, and 0.5 Tbsp sugar. Stir well to combine.

Step 6

Continue to stir the mixture in the pan over medium-low heat as it simmers. Cook for about 2-3 minutes, stirring constantly, until the sauce thickens and coats the Spam and onion beautifully. Be careful not to let it burn!

Step 7

In a separate pan with a little oil, pour in the beaten eggs and scramble them. Use chopsticks or a spatula to gently stir and break them into soft curds. Avoid overcooking to keep them tender.

Step 8

Place 2.5 bowls of warm cooked rice into a serving bowl. Arrange the scrambled eggs neatly around the edge of the rice.

Step 9

Spoon the thickened Spam and onion mixture generously onto the center of the rice. It’s already looking incredibly appetizing!

Step 10

Finally, drizzle mayonnaise in a zigzag pattern over the Spam mixture. Sprinkle the chopped scallions generously on top, followed by a scattering of toasted sesame seeds. Your delicious Spam Mayo Rice Bowl is ready to enjoy!
