Even though it wasn’t a thick-cut ribeye, we’ll make the most of the remaining sirloin to create a hearty rice bowl. I’m sharing this incredibly delicious steak donburi recipe that my husband devoured in just 3 minutes!

Main Ingredients

Steak Sauce

  • Soy sauce 3 Tbsp
  • Mirin (sweet rice wine) 2 Tbsp
  • Sugar 1.5 Tbsp
  • Minced garlic 1/2 Tbsp
  • Water 4 Tbsp

Beef Marinade

  • Salt 2 pinches
  • Rosemary, a little (dried or fresh)

First, let’s marinate the beef to enhance its flavor. Sprinkle salt evenly on both sides of the beef, about 2 pinches each. If you like, add a sprinkle of rosemary. Rosemary helps eliminate any gamey smell and adds a lovely aroma. Let it sit for a moment.

Now, let’s prepare the vegetables that will add a delicious texture to your steak donburi. Slice the button mushrooms into 3-4 pieces or bite-sized portions. Cut the onion into slices about 0.5 cm thick. Slicing them slightly thicker will prevent them from becoming too soft when cooked, ensuring a pleasant bite.

Wash the fresh perilla leaves thoroughly, then roll them up and slice them thinly into about 0.2 cm strips, similar to noodles. This thin slicing will make them look beautiful when arranged on top of the donburi. If you’re using microgreens, just have them ready.

Time to make the delicious sauce, the heart of this steak donburi! In a small bowl, combine soy sauce (3 Tbsp), mirin (2 Tbsp), sugar (1.5 Tbsp), minced garlic (1/2 Tbsp), and water (4 Tbsp). Whisk well until the sugar dissolves. Having the sauce ready beforehand makes cooking much smoother.

Preheat your pan and melt a little butter. Once the butter is melted, add the marinated beef and cook it to your desired doneness. I cooked mine to medium-well. Aim for a nice sear on the outside while keeping the inside juicy and tender; this is key to a great steak donburi. Be mindful of the heat to prevent burning.

Transfer the perfectly cooked steak to a plate. Grind some fresh black pepper over the steak. Freshly ground pepper has a much more vibrant aroma.

To keep the steak juicy, lightly cover the steak on the plate with plastic wrap or aluminum foil and let it rest for a few minutes. This resting period allows the juices to redistribute throughout the meat, making it even more tender and moist.

Now it’s time to slice the rested steak into bite-sized pieces. Slice the steak diagonally, about 1.5-2 cm thick. This way of slicing not only makes it easier to eat but also looks more appealing. Slicing against the grain will ensure maximum tenderness.

Divide the warm cooked rice between two bowls. Artfully arrange the sautéed vegetables on one side of each bowl and the sliced steak on the other side. Finally, sprinkle some sesame seeds over everything for a nutty aroma and flavor.
