Main Ingredients- 1/4 head of well-fermented kimchi, chopped into bite-sized pieces
- 1/4 stalk of green onion, thinly sliced
Seasoning Ingredients- 1 ladle of kimchi juice (approx. 3-4 Tbsp)
- 1 Tbsp oyster sauce
- 1/2 Tbsp sugar (adjust based on kimchi’s sourness)
- Pinch of black pepper
- Pinch of sesame seeds
- 2 Tbsp cooking oil (or perilla oil)
- 1 ladle of kimchi juice (approx. 3-4 Tbsp)
- 1 Tbsp oyster sauce
- 1/2 Tbsp sugar (adjust based on kimchi’s sourness)
- Pinch of black pepper
- Pinch of sesame seeds
- 2 Tbsp cooking oil (or perilla oil)
Cooking Instructions
Step 1
Chop the ripe kimchi into bite-sized pieces, about 2-3 cm. If the pieces are too large, they’ll be difficult to stir-fry, and if too small, the texture might be less satisfying. Place the chopped kimchi in a frying pan. Add 1 ladle of kimchi juice, 1 Tbsp oyster sauce, 1/2 Tbsp sugar, and a pinch of black pepper. If your kimchi is quite sour, feel free to increase the sugar slightly.
Step 2
Drizzle 2 Tbsp of cooking oil (or perilla oil) over the kimchi and seasonings. Stir-fry over medium heat for about 3-5 minutes until the kimchi softens and the seasoning is evenly distributed. It’s important to stir frequently to prevent the kimchi from burning.
Step 3
Once the kimchi is stir-fried to a tender consistency, add the thinly sliced green onions and sesame seeds. Stir-fry for another minute to release their aroma. Be careful not to overcook the green onions, as they can lose their crispiness. Stir everything together and turn off the heat.
