Delicious Stir-Fried Kimchi Recipe

Ingredients- 1/2 head of well-fermented sour kimchi
- 2 Tbsp perilla oil
- 0.5 Tbsp cooking wine (mirin or similar)
- 1 Tbsp sugar
- 1 Tbsp perilla powder
- A little chopped green onion
- A little sesame seeds
Cooking Instructions
Step 1
First, prepare half a head of sour kimchi. Lightly shake off the seasoning from the kimchi, rinse it briefly under running water, and squeeze out excess moisture. Be careful not to wash too much, as it can diminish the kimchi’s flavor. Cut it into bite-sized pieces (about 2-3 cm) and set aside.

Heat a pan over medium heat. Add the cut kimchi and 2 tablespoons of perilla oil. Stir-fry the kimchi, ensuring it doesn’t burn. Once the kimchi becomes somewhat soft, add 0.5 tablespoon of cooking wine and 1 tablespoon of sugar, and continue to stir-fry together for about 3-5 minutes. This step helps to mellow the sourness of the kimchi and add sweetness and depth of flavor.
Step 3
Reduce the heat to low. Cover the pan and let it simmer for about 5 more minutes to further soften the kimchi. Finally, add 1 tablespoon of perilla powder and stir well to combine evenly with the kimchi. The addition of perilla powder will enhance the nutty aroma and make it even more delicious.

Transfer the stir-fried kimchi to a serving dish. Garnish with a sprinkle of chopped green onion and sesame seeds. The colorful appearance and the fragrant aroma of sesame seeds will make it look even more appetizing.
