Delicious Stir-Fried Kimchi Rice

Ingredients (Serves 1)

  • 1 bowl of warm rice (approx. 200g)
  • 100g fermented kimchi
  • 3 Tbsp kimchi brine
  • 1 Tbsp vinegar
  • 1/3 Tbsp sugar
  • 1/2 to 1 Tbsp soy sauce (to taste)
  • 1/2 to 1 Tbsp sesame oil (to taste)
  • 1 Tbsp chili oil
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, let’s prepare the kimchi. Place the kimchi and kimchi brine in a bowl. Add sugar and vinegar and mix well. This seasoning helps to mellow the sourness of the kimchi and enhance its savory flavor. Once seasoned, finely chop the kimchi with scissors into pieces roughly the size of rice grains. Don’t worry about chopping it too finely.

Now, let’s start stir-frying. Heat a pan and add the chili oil. Add all the finely chopped kimchi to the pan. Stir-fry over medium heat for about 3-5 minutes, or until the kimchi becomes slightly translucent and tender. You’ll notice a delicious aroma rising during this step.

Once the kimchi is somewhat cooked, increase the heat to high. Add the bowl of warm rice to the pan and vigorously stir-fry it with the kimchi. Use a spatula to break up any clumps of rice as you stir-fry. Stir-frying over high heat will help the rice grains become fluffy and separate.

After the rice is evenly stir-fried, pour the soy sauce along the side of the pan. The soy sauce will caramelize slightly from the heat, adding a wonderful depth of flavor. Once the soy sauce starts to sizzle, quickly mix it with the rice and continue stir-frying. Maintaining high heat at this stage is key to evaporating some of the rice’s moisture, giving it a slightly chewy texture.

Now, turn off the heat completely. We’ll use the residual heat of the pan to add the final touch of flavor. Drizzle the sesame oil over the fried rice and mix it in well. Adding sesame oil after turning off the heat preserves its fragrant aroma.

Transfer the delicious stir-fried kimchi rice to a bowl, and it’s ready to serve! For an even more satisfying meal, you can top it with a fried egg, or garnish with seaweed flakes and sesame seeds according to your preference.
