Transform Leftover Stir-Fried Pork into a Flavorful Fried Rice
This recipe shows you how to transform delicious leftover stir-fried pork (Jeyuk Bokkeum) into a fantastic meal. It’s simple yet rich in flavor, perfect for busy days or special occasions. Experience the amazing combination of tender stir-fried pork, rice, and creamy melted cheese!
Main Ingredients- 450g pork shoulder, cut into bite-sized pieces
- 1 onion, diced into 0.5cm cubes
- 2 green onions, thinly sliced
- 1 bell pepper, diced into 0.5cm cubes
- 2 shiitake mushrooms, diced into 0.5cm cubes
- 1 cup kimchi, finely chopped
- 2 bowls of cooked rice, warm
- 70g mozzarella cheese, or to your preference
- 1 Tbsp sesame oil (for finishing)
Pork Marinade- 1 Tbsp cooking wine (helps remove odor)
- 1 Tbsp ginger wine (adds flavor)
- A pinch of black pepper (adjust to taste)
Stir-Fry Sauce- 2 Tbsp gochugaru (Korean chili flakes, for color and spice)
- 2 Tbsp sugar (adjust sweetness)
- 3 Tbsp soy sauce (adds umami)
- 2 Tbsp minced garlic (enhances flavor)
- 4 Tbsp gochujang (Korean chili paste, the core of the rich sauce)
- 1 Tbsp sesame oil (adds nuttiness)

Cooking Instructions
Step 1
First, in a bowl, combine the bite-sized pork shoulder with 1 Tbsp of cooking wine, 1 Tbsp of ginger wine, and a pinch of black pepper. Mix well and let it marinate for about 10 minutes. This step helps to remove any pork odor and tenderize the meat.

Next, prepare the vegetables for a rich texture in your fried rice. Wash and dice the shiitake mushrooms, bell pepper, and onion into 0.5cm cubes. Thinly slice the green onions and set them aside.

Now, let’s make the stir-fry sauce. In a bowl, add the marinated pork. Mix in 2 Tbsp gochugaru, 2 Tbsp sugar, 3 Tbsp soy sauce, 2 Tbsp minced garlic, 4 Tbsp gochujang, 1 Tbsp sesame oil, and a pinch of black pepper. Combine everything thoroughly and let the pork marinate for about 20 minutes. Allowing the flavors to meld is crucial.

Heat a lightly oiled pan over high heat. Add the marinated pork and stir-fry quickly, breaking it apart with chopsticks or a spatula to prevent sticking.

When the pork is about halfway cooked, add the finely chopped kimchi and stir-fry together. The kimchi’s tangy flavor will deepen the overall taste of the dish.
