I spotted some sweet potato sprouts at the banchan (side dish) corner that really caught my eye! Since my daughter loves this dish, I naturally gravitated towards buying them. However, a minor drawback of pre-blanched sweet potato sprouts is that peeling them can take nearly two hours once you get home. But once you finish that task, there’s a wonderful sense of accomplishment, like you’ve achieved something significant! haha. The real upside is that once the peeling is done, stir-frying them takes less than 5 minutes! A quick stir-fry results in a delicious rice side dish that is ready in a flash, easily making up for the initial effort. This is probably why I find myself making it so often, and feeling so pleased once the sprouts are all peeled. haha. And seeing my daughter enjoy the stir-fried sweet potato sprouts so much brings an extra wave of satisfaction. Seasoning Ingredients

  • 2 Tbsp Chili Seed Oil (Gochu Ssi Giroem) or Sesame Oil
  • 1 Tbsp Red Pepper Flakes (Gochugaru)
  • 2 Tbsp Anchovy Sauce (Galechi Aekjeot) or Fish Sauce
  • 1/2 tsp MSG/Flavor Enhancer (Optional)
  • A pinch of chopped Scallions
  • 1 tsp Minced Garlic
  • A pinch of Toasted Sesame Seeds

Cooking Instructions

Prepare the sweet potato sprouts. Start by washing them thoroughly under running water to ensure they are clean and ready for cooking.

Peel the sweet potato sprouts. Gently strip away the outer skin from the stem downwards. Removing the tough outer layer is key to achieving a tender and pleasant texture. After peeling, rinse them under cold water and drain well.

In a bowl, combine the prepared sweet potato sprouts with all the seasoning ingredients: 2 Tbsp chili seed oil (or sesame oil), 1 Tbsp red pepper flakes, 2 Tbsp anchovy sauce (or fish sauce), 1/2 tsp MSG (optional), and 1 tsp minced garlic. Gently mix everything with your hands, ensuring the seasonings are evenly distributed throughout the sprouts.

Heat a wok or frying pan over medium-high heat. Add the seasoned sweet potato sprouts and stir-fry quickly for about 3-5 minutes, or until the sprouts are slightly wilted and the flavors have melded together.
