Do you all love stir-fried udon? I used to be obsessed with it and ate it often, but these days it’s hard to go out. So I thought, why not try making it at home? I recreated the delicious taste from memory, and voilà! A simple yet incredibly delicious stir-fried udon was born! It’s perfect for when you’re craving something tasty, have a special occasion, or just want a delightful meal.

Main Ingredients
  • 1 serving fresh udon noodles
  • 1 handful potato dough flakes (about 100g)
  • 1/4 onion
  • 1/2 stalk green onion (or 1/3 stalk)
  • 2 leaves napa cabbage
  • 6 shrimp (cocktail shrimp)
  • 2 strips bacon

Stir-Fry Sauce
  • 1 Tbsp oyster sauce (15ml)
  • 1 Tbsp sugar (15ml)
  • 1 Tbsp soy sauce (15ml)
  • 1 Tbsp mirin or cooking sake (15ml)
  • 3 Tbsp chili oil (45ml)
  • Pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

Let’s gather the ingredients for our delicious stir-fried udon! I picked up some fresh potato dough flakes and flavorful bacon from the supermarket. When choosing ingredients, looking for the HACCP mark can help ensure you’re buying fresh and safe products. Starting with good ingredients always makes the cooking experience more satisfying!

Step 2

Now, it’s time to prepare the vegetables and other ingredients that will add vibrancy to our stir-fried udon. I’m using 6 cocktail shrimp, which I’ve slightly thawed under running water. If your shrimp are frozen, soak them in cold water until fully thawed before using.

Step 3

Slice the onion thinly. Cut the green onion diagonally. Chop the napa cabbage into bite-sized pieces. Cutting vegetables into similar sizes ensures they cook evenly and look appealing.

Step 4

Cut the bacon into pieces roughly the same size as the vegetables. This way, they’ll mix well and absorb flavor evenly when stir-fried with the udon. If the bacon is too fatty, you can lightly pat it with a paper towel to remove excess grease.

Step 5

While the vegetables are being prepped, bring a pot of generously salted water to a boil. Add the fresh udon noodles and potato dough flakes and cook for about 2 minutes. Be careful not to overcook them, as they will become mushy when stir-fried! Drain the udon and dough flakes without rinsing them in cold water, and set them aside. This helps keep the noodles springy and firm.

Step 6

A key secret to achieving that restaurant-quality stir-fried udon taste is aromatic chili oil! Pour about 3 tablespoons of chili oil into your wok or large frying pan. The spicy aroma of the chili oil will whet your appetite.

Once the chili oil is lightly heated, add all the prepared vegetables (onion, green onion, napa cabbage) and stir-fry them over high heat. Cook until the vegetables are slightly softened and translucent. Stir-frying quickly over high heat helps maintain a pleasant crispness; low heat can release too much water.

When the vegetables have softened slightly, add the sliced bacon and thawed shrimp. Season with a pinch of salt and pepper. The savory flavors of the bacon and shrimp will blend with the vegetables, enhancing the overall taste. Continue to stir-fry until everything is well combined.

Step 9

Now, let’s make the special sauce that defines our stir-fried udon! In a small bowl, combine 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1 tablespoon of mirin (or cooking sake), and 1 tablespoon of sugar. Add 3 tablespoons of water and mix well. Pre-mixing the sauce prevents it from burning and makes stir-frying smoother.

Step 10

Pour the pre-mixed sauce over the ingredients cooking in the pan. As the sauce begins to bubble, the delicious aroma of stir-fried udon will fill your kitchen.

Once the sauce is bubbling, add the drained udon noodles and potato dough flakes to the pan. Quickly stir-fry to ensure the sauce evenly coats the noodles and all other ingredients. Use chopsticks or tongs to mix everything thoroughly, preventing clumps and ensuring a beautiful glaze.
