Tteokbokki Ingredients

  • Tteokbokki rice cakes: 2 rice cups (approx. 300g)
  • Fish cakes (eomuk): 2 sheets
  • Green onions (scallions): 1/2 stalk

Tteokbokki Seasoning

  • Gochujang (Korean chili paste): 1 Tbsp (heaping)
  • White sugar: 2 Tbsp
  • Soy sauce (regular): 2 Tbsp
  • Gochugaru (Korean chili flakes): 1 Tbsp (for standard spiciness)

Cooking Instructions

Step 1

First, cut the fish cakes into bite-sized pieces (about 3-4 cm). Adding fish cakes to tteokbokki deepens the broth’s flavor and adds a pleasant chewiness.

Step 1

Step 2

Slice the green onions to a similar length as the fish cakes. If the green onions are thick, slicing them in half lengthwise will make them tender when cooked.

Step 2

Step 3

In a wide pan or pot, add 2 rice cups (approx. 400ml) of water. Add the tteokbokki rice cakes. It’s a good idea to rinse the rice cakes in water beforehand to prevent them from sticking together. (If using rice cake soup slices, soaking them in cold water beforehand will make them even softer.)

Step 3

Step 4

Once the water starts boiling, add 2 Tbsp of sugar. The sugar will dissolve and simmer with the rice cakes, adding a glossy sheen and sweet flavor.

Step 4

Step 5

As the water begins to boil, stir in 1 Tbsp of gochujang, which forms the base of the spicy flavor. It’s best to dissolve the gochujang in a little water before adding it to prevent clumps.

Step 5

Step 6

Add 2 Tbsp of soy sauce to enhance the savory umami taste. Soy sauce balances the deep flavor of the tteokbokki.

Step 6

Step 7

Now, add the pre-cut fish cakes and green onions. Simmer over medium heat, stirring occasionally, until the rice cakes are soft and the sauce has thickened, allowing the flavors to meld beautifully. (This should take about 5-7 minutes.)

Step 7

Step 8

Finally, add 1 Tbsp of gochugaru (chili flakes) for a spicy kick and vibrant color. Feel free to adjust the amount of gochugaru to your preference.

Step 8

Step 9

Once all the ingredients are well combined and the sauce has thickened, your delicious and abundant tteokbokki is ready! Enjoy it warm for the best flavor. Adding boiled eggs or ramen noodles is also a great option!
