Cooking Instructions

Step 1

Making the Earl Grey Scones: First, prepare 2 Earl Grey tea bags. Carefully empty the tea leaves from inside. We will grind these leaves finely to use in the recipe. You can use a blender or a mortar and pestle for this.

Step 1

Step 2

For the Earl Grey scone icing, measure out 80g of powdered sugar and set aside.

Step 2

Step 3

From the finely ground Earl Grey tea leaves, take 1 teaspoon and add it to the powdered sugar prepared earlier. Mix well to create the icing base, then set it aside. The remaining ground tea leaves will go into the scone dough.

Step 3

Step 4

In a large bowl, sift 280g of whole wheat flour. Add 6g of baking powder, 70g of sugar, and the finely ground Earl Grey tea leaves (from 2 tea bags). Whisk everything together until well combined, ensuring there are no clumps. You should start to smell the lovely aroma of Earl Grey!

Step 4

Step 5

Now it’s time to add the wet ingredients. Measure 75g of vegetable oil and 90g of almond milk or soy milk, and pour them over the dry ingredients.

Step 5

Step 6

Using a scraper or spatula, gently mix until just combined and no dry flour is visible. Be careful not to overmix, as this can make the scones tough. Mix just enough for the dough to come together.

Step 6

Step 7

Once the flour is incorporated, gather the dough into a single ball. Gently press it together with your hands to form a round shape within the bowl.

Step 7

Step 8

Now, let’s shape the dough for the scones. Lightly cut the round dough in half. Then, stack the two halves on top of each other and reform into a round shape. Cut it in half again and stack. Repeat this folding and reforming process 4 to 5 times. This technique helps create flaky layers in your scones!

Step 8

Step 9

Finally, shape the dough into a round disc about 2cm thick. Then, cut it into wedges, like a pizza, into 6 to 8 pieces to form the scones.

Step 9

Step 10

Line your air fryer or baking sheet with parchment paper. Place the cut scone wedges onto the prepared surface, ensuring they have some space between them. Lightly brush the tops of the scones with almond milk or soy milk for a beautiful golden finish after baking.

Step 10

Step 11

Bake in the air fryer at 180°C (350°F) for 20 minutes. After 20 minutes, carefully flip the scones and bake for another 10 minutes until they are fully cooked through. (For conventional ovens, use the same temperature and bake for approximately 25-30 minutes, checking periodically to prevent burning.)

Step 11

Step 12

While the scones are baking, let’s make the icing. Combine the reserved 80g of powdered sugar and 1 teaspoon of ground Earl Grey tea leaves with 12g of water. Stir until smooth and lump-free to achieve a pourable consistency. Adjust the water slightly if needed – it should be thick enough to drizzle but not too runny.

Step 12

Step 13

Transfer the finished Earl Grey icing into a piping bag with a small tip, or simply use a spoon. Drizzle the icing back and forth over the warm, baked Earl Grey scones. Applying it while they are slightly warm allows the icing to melt just a little, creating a lovely glaze.

Step 13

Step 14

Let the iced scones sit at room temperature for about 5 to 10 minutes. The icing will set beautifully, leaving you with perfectly decorated Earl Grey scones ready to be enjoyed!

Step 14

Step 15

Making the Rich Chocolate Scones: In a large bowl, sift 110g of whole wheat flour. Add 20g of unsweetened cocoa powder, 4g of baking powder, 2g of salt, and 55g of sugar. Mix the dry ingredients thoroughly. The rich chocolate aroma will start to fill your kitchen!

Step 15

Step 16

Add 40g of almond milk or soy milk and 45g of vegetable oil to the dry ingredients. Mix with a scraper or spatula until just combined and no dry flour remains. For an extra chocolatey kick, stir in finely chopped dark chocolate (optional). This will give you chocolate chip scones!

Step 16

Step 17

Similar to the Earl Grey scones, gather the dough into a ball and repeat the folding process 4 to 5 times: cut in half, stack, reform into a round, cut in half again, stack. This layering technique is key for light and flaky scones. Remember not to press down too hard during this process.

Step 17

Step 18

Shape the dough into a round disc about 2cm thick and cut it into 6 to 8 wedges. Line your air fryer or baking sheet with parchment paper and place the scone wedges with space between them. Brush the tops with almond milk or soy milk for a nice baked color.

Step 18

Step 19

Bake in the air fryer at 180°C (350°F) for 20 minutes. Flip the scones and bake for another 10 minutes until cooked through. (Adjust time for conventional ovens as needed.)

Step 19

Step 20

Prepare the chocolate icing. In a small bowl, combine 40g of powdered sugar with 1 teaspoon of cocoa powder and 6g of water. Mix until smooth and glossy. You can adjust the amount of cocoa powder to control the intensity of the chocolate flavor.

Step 20

Step 21

Drizzle or pipe the finished chocolate icing over the warm chocolate scones. Your delicious vegan chocolate scones are now ready to be enjoyed!
