Whip up a quick and satisfying vegetable curry using this simple recipe, perfect for a weeknight meal or when you have guests. Utilizing the ‘Curry Queen’ mix adds a rich depth of flavor, making it a family favorite. This dish is great for a speedy meal when you’re short on time.
Main Ingredients- 1 Onion (medium)
- 1 Carrot (medium)
- 1 Potato (medium)
- Curry Queen mix (your preferred brand)

Step 1
First, prepare the core vegetables: potato, onion, and carrot. Wash them thoroughly, then cut them into rustic, bite-sized cubes, about 1.5 to 2 cm. Cutting them slightly chunky helps maintain a nice texture during cooking; avoid cutting them too small as they can become mushy.

After dicing, drain any excess water from the vegetables and have them ready for cooking.

Heat a generous amount of olive oil in a wide pan over medium heat. Add the cubed potatoes and carrots first. Sauté them for about 5-7 minutes until they start to turn golden brown and slightly tender. Sautéing the base vegetables like this enhances their natural sweetness and builds a deeper flavor profile.

Once the potatoes and carrots have begun to soften and release their aroma, add the chopped onion. Continue to sauté everything together until the onions become translucent and fragrant.

For an even richer taste, you can add the included ‘fond de veau’ (gravy base) from ‘Curry Queen’ or a little of your own stock. Bring the mixture to a boil over high heat.

Once the curry base is boiling rapidly, stir in the ‘Curry Queen’ curry powder. Make sure to dissolve it completely with a spatula to prevent clumps.

Reduce the heat to medium-low and continue to simmer, stirring frequently to prevent sticking. Cook for about 5-10 minutes, or until the curry reaches your desired thickness.
