Oatmeal Cranberry Cookies: A Foolproof Recipe for Home Bakers
This is a recipe that helped me overcome a baking slump with absolute confidence! The delightful combination of chewy oatmeal and tart-sweet cranberries makes these cookies incredibly addictive. They’re perfect for creating a wonderful tea time experience at home.
Cookie Dough Ingredients- 135g unsalted butter, softened
- 100g rolled oats
- 90g granulated sugar
- 90g eggs (approx. 2 medium eggs)
- 150g cake flour (or all-purpose flour)
- 4g baking powder
- 5g rum
- 50g cranberries, soaked in rum and drained
- 2-3 tbsp (approx. 20-30g) fresh cranberries for topping
Cooking Instructions
Step 1
* First, soak the cranberries in rum for about 1 hour. This step reduces any astringency and enhances their flavor. Set aside some fresh cranberries for topping (you’ll need about 2-3 tablespoons more!).
Step 2
* To prevent a bitter taste from the oats, sift them through a fine-mesh sieve 2-3 times to remove excess powder. This will result in a smoother cookie texture.
Step 3
In a mixing bowl, cream together the softened butter and sugar using a hand mixer. Beat until the mixture is light and fluffy, with a pale yellow color. This creaming process is crucial for the cookies’ crispness and flavor.
Step 4
Gradually add the whisked eggs to the butter-sugar mixture, beating on high speed with the hand mixer. It’s important to incorporate the eggs fully to prevent the batter from separating. Continue mixing until the batter turns pale and smooth.
Step 5
Add the drained rum-soaked cranberries, sifted oats, cake flour, and baking powder to the bowl. Gently mix with a spatula or on low speed with the hand mixer until just combined. Tip: Mixing the cranberries and oats in first before adding the dry ingredients helps distribute them more evenly. (I know this, but I forgot! You should definitely remember this! ^^)

You now have a lovely, pale cookie dough! It’s ready to be shaped and baked.
Step 7
Line a baking sheet with parchment paper. Drop rounded spoonfuls of the dough onto the prepared sheet, leaving some space between each cookie. Gently flatten each mound with your hand to create a round shape, and then lightly press the top with a fork to create a simple pattern. This helps the cookies spread nicely while baking.
Step 8
Arrange 5-7 fresh cranberries on top of each cookie as a garnish. Bake in a preheated oven at 170°C (340°F) for about 15 minutes, or until the edges are lightly golden brown. Once baked, let them cool completely on a wire rack before enjoying these delightful oatmeal cranberry cookies!
