Main Ingredients

  • 1 root of burdock (approx. 300g)

Braising Sauce

  • 1/2 cup (100ml) soy sauce
  • 1/2 cup (100ml) plum extract
  • 1/2 cup (100ml) mirin (rice wine)
  • 1/2 cup (100ml) water
  • 1/2 cup (100ml) corn syrup
  • A little sesame oil
  • A little toasted sesame seeds

Cooking Instructions

Step 1

Thoroughly wash the burdock root to remove any dirt, then peel the skin thinly using a peeler. Cut the burdock into bite-sized pieces, about 5-7cm long, and then slice them thinly on an angle or into long strips about 0.5cm thick. Blanch the cut burdock in boiling water for just 1-2 minutes to remove impurities and retain a crisp texture. Rinse the blanched burdock under cold water and drain well.

In a pot, combine the soy sauce, water, mirin, and plum extract in equal 1/2 cup portions (a 1:1:1:1 ratio) to create the braising liquid. Add the prepared burdock root to this liquid and bring it to a boil over high heat. Once it starts boiling vigorously, reduce the heat to medium and simmer for about 15 minutes, allowing the burdock to absorb the flavors.

Cover the pot and continue to simmer over low heat for another 20-30 minutes, or until the burdock is completely tender and has absorbed the sauce. Make sure to check occasionally to prevent the liquid from reducing too much. When the burdock is nearly done, add an additional 1/2 cup (100ml) of corn syrup and simmer for about 5 more minutes to add a glossy finish and enhance the sweetness. Just before turning off the heat, stir in a little sesame oil and toasted sesame seeds for a delicious finishing touch. Your savory and sweet braised burdock root is ready!
