Chicken Ingredients- Chicken (800g, for braising or your preferred cut)
- Cheongyang chili peppers (minced, 2 count, adjust to spice preference)
Spicy & Sweet Sauce- Gochugaru (Korean chili flakes, 6 Tbsp)
- Soy sauce (4 Tbsp)
- Sugar (4 Tbsp)
- Water (1 cup, approx. 200ml)
- Black pepper (a pinch)

Cooking Instructions
Step 1
First, prepare 800g of chicken. Using chicken cut for braising (dak-bokkeum-tang) makes preparation easier. Make 2-3 shallow cuts in the chicken pieces; this helps the sauce penetrate better and speeds up cooking.
Step 2
Bring a pot of water to a rolling boil. Once boiling, carefully add the prepared chicken and blanch for about 3 minutes and 30 seconds. This step helps remove impurities and any unwanted odors from the chicken.
Step 3
While the chicken is blanching, let’s prepare the delicious sauce. In a large bowl, combine the 2 minced Cheongyang chili peppers, 6 Tbsp gochugaru, 4 Tbsp soy sauce, 4 Tbsp sugar, 1 cup water, a pinch of black pepper, and a generous 5 Tbsp of minced garlic. Mix everything thoroughly. The balance of sweetness, spiciness, and umami is key!
Step 4
Drain the blanched chicken and add it to the prepared sauce. Toss to ensure the chicken is evenly coated. Transfer the sauced chicken to a pan and bring it to a boil over high heat. Once boiling, immediately reduce the heat to medium and let it simmer, stirring occasionally, until the sauce thickens and coats the chicken beautifully, giving it a glossy finish.
